I would sing all those hymns throughout the pilgrimage. This video is actually part of a much longer vlog edited for secular people and this editing style with the music was to introduce them to traditional Catholicism. I could have chose to do the hymns but it would not have fit the original video. This video did include the Kyrie, French Hail Mary, and various French hymns throughout it, just not in their entirety.

Some flags and banners are old. In my parish, we still have handmade ones from the early 20th century that we still carry in processions. But you can easily find new flags on the internet, if you search a bit, you can even have them made indiviudally with your own Christian design and Christian symbols. Printing new ones is not expensive with modern techniques. If you look around you can find companies who do them. There are still companies that hand-make Christian banners and flags, but these are very expensive!
