Very nice job good workmanship i wish you would of ground the bevels in then done the pattern on the blade i think it would off made it even crisper around the edges

seeing that belt walk when ur sanding the handle makes me feel so uneasy. ones the belt goes over the rollers edge enough it will slap ya. also why clear coat. oil or a wax would have looked as good if not better and gives the wood better protection over time

All of your knives are very ordinary. If you really want to proof your knives are 'sharp' then put a banana vertical position and cut it with your knives by slicing through the banana but both upper and lower part of the banana should stay in that vertical position then you pick up the upper half and show that your knife went through it without making them fall. That is how a sharpness of knives is tested. I watched your third design and shut off the video. and disliked it.
If you want to get technical, there are edge testers to accurately measure sharpness. Slicing paper is a common and perfectly fine demonstration of sharpness. It’s odd that you decided to critique that?
