- As we all know Cooking in an Iron Kadai or a Pan provides several benefits, it increases Iron content in the food, its tough and durable, its acts as a nonstick when well seasoned, it evenly cooks food, its chemical free, easy to clean and so on…..
Not only that it lasts for generations once its Seasoned and Maintained effectively.
Many use different ways to season it however today I am gonna share one of the simplest, easiest and most effective way in just 3 steps
Also will be sharing few tips on how to clean and maintain it that will stay rust free and will help the iron kadai / pan to last for generations

Hello Nisha, on a day-to-day basis, what should the iron vessels be cleaned with? For ex: for clay pots, you have suggested - besan/rice flour with salt. How do we clean iron tawas/ kadai?
I use mild dish wash liquid with scorth bite scrub for cleaning iron pots and pan.

In a well seasoned kadai you may cook tomato and tamarind based recipe. However ensure you transfer it to another container immediately after cooking. Hope this helps stay connected

No there wont be onion smell as you gonna wash and reuse it again.

First time when you saute onion or any other veggies we discard it just to avoid consuming any black residue left in kadai and might get mixed with veggies. Hope this helps. Stay connected😊
After seasoning, before cooking have to wash kadai , for cooking?

Hi..even after following your method for 5to6 times it (kadai and tava)still leaves black stains so I am still apprehensive about using them….please let me know what to do
Hi, some stains take little more time do try couple more days and stains will go off.

Mam for me food become black while cooking what foods can be cooked in iron vessel
Hi Vijaya, reason of food turning black could be it's not seasoned well or else left in kadai after cooking. After cooking transfer it to another pot. I use kadai to make all types of sabjis, make chutneys, sukka masala gravy, stir fry and even use for frying food. Hope this helps. Stay healthy 😊
So everytime you want to use it, a medium size onion has to be sauted and thrown or just wash it and use it and then after use clean dry oil and keep aside and repeat.. Pls clarify
Only for the first time you need to discard the onion. After that just wash and start cooking directly.

Hi Shruti, don't worry if you have seasoned your kadai correctly, continue cooking regularly & you will see difference in kadai surface and it will turn non sticky.

Hi Parminder, I guess you are asking about iron kadai. It's very simple just pour from hot water, leave it for sometime and discard the water. Then as usual wash it with scruber, dry and oil it as shown in the video. Hope this helps.
I purchased a black same kadai from Amazon and did same cleaning steps multiple times. The black stain has not gone completely. still hands become slight black whenever I wash it more and more. Any other trick please suggest

Hi can you use ghee and not coconut oil ?
Never tried using ghee, I would recommend use normal cooking oil instead.

Bitter or metallic taste comes when pan is not well seasoned or else if food is left to stay in pan after cooking. After cooking immediately transfer to another container. Hope this helps. Stay connected 😍😍

Hi Ma'm, We bought a normal iron Kadai. Can we season it the same way with oil. Is it ok to season it of the South india traditional way with " Rice starch/ Garcinia Cambodia( kudam puli) water??
Hi yes you may season with oil as shown in my video in 3 steps. I am not sure about rice starch water method.

What's the difference in this iron kadai and iron wok?? Can we use iron kadai for stir frying Chinese food?
Iron Kadai is a thick, round shape and deep bottom pot or pan whereas Wok is a round bottomed pot and little wider comparatively.
In both you can stir fry food.

Hi Tanu, once food is cooked transfer from iron kadai. One of the common reason of food turning black is many allow the food to stay in kadai. If you transfer it the color won't change.
Immediately after that wash the kadai and follow the 3 simple step of cleaning and maintaining.

Yes we can wash with mild dishwash using sponge.
Mam...I bought white iron kadai...every time it is greeting rusted...and food turns black colour...
If your food is turning black that means your kadai is not seasoned well or else you are storing the food in the kadai after it's cooked.
After cooking food transfer it to another vessel and then wash, dry and oil the kadai. Kadai won't rust if it's maintained well. Pls follow the three steps as shown in my video and you won't face any issue. Hope this helps

What if rust appears on kadai??
I have the same utensil. I did the same process for 4-5 days
I used mild liquid nd normal scrub for cleaning but my kadhai turns to silver colour
That means your kadai is white and the coating came off after washing. Once it turns cleans without leaving black stains then you may proceed with cooking. Hope this helps stay connected 😍🥰

As we are seasoning the kadai after every wash it wont turn rusty. I have always been using this method, never tried salt and water though...

Frying onion is just one time, however other steps you need to follow everytime you use.

Hello Ma'am I bought white iron kadai 5 months back. And I didn't seasoning it because I didn't know the process. It's already 5 months over can I season it now? It leaves to much rust whenever I keep it after cooking. And one thing you said that don't store food after cooking but ma'am when food is boiling that time the food color turns black. Even I have left having egg curry because the eggs turn black. Please help me how can I correct that kadai?
Hi Payel, Yes you may season even after 5 months. If food turns black while in cooking process means it's not seasoned well. Do season it again and then start cooking. Food won't change color.

Hi mam, I followed this process over a week n half and I noticed black is not coming, so I started cooking, but again the food turning black. I'm following the proper steps, not storing food also. Hi Bhargavi, if food turning black while cooking means the pan is not well seasoned yet. Some pans take a while more to get seasoned. My advise is season it for few more days just by washing, drying & oiling everyday atleast twice a day for couple more days then try cooking. Hopefully food wont discolor. Yes you need to season everytime you use for good maintenance and long shelf life. With regular seasoning even the spatula scars will go.

Hi madam, but still there are black stains on that kadai. Even I have bought this kadai and trying to clean the black coating using lemon and baking soda. But still the black coating is not going completely. Not sure cooking with that black coating is safe or not.
Some kadai takes a while, continue seasoning for couple more days and stains will go off. Then you may start cooking.

Yes it's absolutely fine to apply oil and store, just ensure you wipe out excess oil with paper towel.

When i wipe down after washing, there is no black stain coming in hand while wiping but, when i heat oil in it and wipe in tissue.. there is this black residue coming in tissue. Should i keep scrubbing everyday?
