I’m still worried if I travel to lets say Thailand and I download a esim from a Thai provider, how can I be certain my US Provider doesn’t charge me roaming? Is there any possibility of the phone switching back to my US esim without my express selection? For example is my Thai esim pay by month expires will the US esim automatically come back on or will the phone simply stop having any service? Sorry if the questions are dumb, I know nothing about this stuff
You can disable the US eSIM from your settings so it's not activated or used as a backup when you're traveling.

Not sure I understand the question but this isn't a security feature although does make it easier than having to obtain a replacement physical SIM in some cases.

But my only question is eSIM is not yet compatible with most devices, do you think there's a possibility that eSIM will be made compatible for other phones that is 3 years old? As what I've known it is most compatible with Apple brands, latest Samsung phones and other brands.
Unfortunately, eSIM requires a chip embedded on the phone. Without that hardware, it won't support eSIM, so it's not a software update that can be pushed out to older phones.
