This is what an elderly friend of my told me. Hainaneses Pork chop is a riff off the German dish, the schnitzel. Back in the colonial days, a lot of western restaurants employ Hainanese as cooks. These Hainanese cooks have customized the schnitzel to use more locally, available ingredients. I have been to Hainan but have not seen this dish as a mainstay item. Hope you visit Hainan anyway, their spread of seafood is indescribable.

They only sell at around 6pm. 1time I ate these type of very crispy pork is at hainese curry stall behind Hong Sen curry Bukit merah. They stop sell it long ago. It like eating crispy chicken skin not oily and they had a light sugar coated batter. Haiz .

Pork is the best. Crispy pork is the best.. The only thing tied with crispy pork is well cooked soft and sour pork belly squares. ...though i guess crispy pork belly is a nice tie!

Why not tempura oil and tempura deep fry method for Hainan pork chop. Honey with Hainan pork chop? Mallet pork with pork under glad wrap so the meat juice doesn't spray everywhere resulting in food safety issue. Wipe everywhere after done. Cream soda crackers with bread cubes mix crumb alternative?
