Hey Nancy! I have a question for you, hon. How much brown sugar did you end up using? I could have sworn her say 3 1/2 cups but saw that she only used maybe 1 1/2? Did I hear wrong? Do you still have any left? 😂 I’m thinking about making some (doubling the recipe) for Christmas gifts this year. I hope to hear from you!

I made this and canned it. I loved it! It was so close to the flavor of my Mum's Sweet and Sour sauce that I often will take a 1.5 pint jar of it and add a can of pineapple to it. We put it over rice and add keilbasa and it's a great, fast dinner. It would be even better with green peppers! I am thinking of adding some apple to it next time to make it almost a chutney.

I did it! I used the Instant Pot and followed your recipe. I have 22 half pints and a pint in the refrigerator. We had the best burgers we can remember, hubs doesn't want burgers without this jam, ever again. I gave two jars to the neighbors. Twenty plus jars should last hubs and I a while, but I have a feeling he's going to be asking for more in the near future. Thank you.

This is in it's final 5 minutes in my brand new water bath canner and it's my very first canning adventure. I had a few obstacles (glass top stove ... I researched, pondered, dithered...then just went for it .... so far so good lol) and I am pretty sure at least one will not seal as I was one lid short at the end so I must have double lidded one jar (opps) ... but I am super excited. It tasted and smelt amazing. thank you for all you do in helping a newbie like me learn such an important and fun new skill.

Many thanks to all of you! (Side note - I've since found your brown sugar video) My question for you is how much molasses do you use to make your brown sugar? Or can you direct me to the recipe? It looked so wet and scrumptious with all that molasses!

    • @seecanon5840

They do like that one teaspoon to one tablespoon to stop foaming. Added butter in small amounts cooks the water and milk away leaving that little bit of butter oil. Butter oil is known as ghee. The 1/2 cup of butter shouldn't bother you in this recipe, I'd water-bath this at the required 10 minutes.

I got a 50lb bag of onions for $1.99. can you believe it. .04 cents per lbs. I have canned this wonderful jam today I got 12 jars. I also canned 12 jars of bread and butter onions. and am loading the dehydrator now. I also have 3 gal bags diced in the freezer. A friend just got a commerical slicer and it took longer to peel the onions than to process. I would still be cutting onions without the slicer!!! Giving onion jam for Christmas gifts. Merry Christmas to you all

This looks fantastic! It would be a great addition for a gift to do a jar of this and a jar of bacon Jam. Just a thought if you don't want to keep grabbing a clean spoon to taste with what I do is take my stirring spoon and just drop a little bit of product onto the spoon have been using that way it doesn't go back in the pot after it's been in my mouth but I don't have a bunch of dirty spoons. Of course that's what I'm cooking something on the stove that I have to keep tasting.

Girls, ladies and gentlemen. I have just finished a big batch of onion marmalade and I am pleased to tell you that there was not one tear shed!! The trick? One that I learned somewhere I don't remember. Just peel your onions without cutting the "hairy" end. For that you just use your pairing knife and cut into the onion around the "hairy" circle. You will end up with a cone-shape bit. Apparently, is in that cone, in that area inside the onion where lies the substance that irritates the eyes making you cry. Or something like that. I won't go in too deep, all I know is that it works. Give it a try!!

How do you counteract tears while chopping onions? 🤔

  • @vickiolson1198
    @vickiolson1198 7 лет назад +5

Boy, this is one that I will have to try....probably at the same time I do my French onion soup. I just want to caution everyone to never tip your jars when they are coming directly out of the canner, not even to get the water off the top of the lids..... Those jars and the contents are still very hot, sometimes even still boiling or very close to it. Those lids are still loose, floating, if you will, and so tipping them can get the jar contents onto the top of the jar causing a potential sealing fail. I know that I am sounding like 'Safety Sally' here, but when canning, you are putting your families well being at stake every time you open up a jar... It is such a simple thing to remember not to do, but just as important as wiping your jar lids clean before putting the lids on. I know that The Kneady Homesteader, did it to show us how well the contents of the jar looked, but I'll bet that she will be keeping an extra eye on that jar to make sure that it sealed properly. Also for you beginners, add some vinegar to your canning water to keep your jars nice and clear. I can't wait to see the next canning video!!!

Looks amazing! Your last one I watched and this one is down our ally! Do you think A1 would be a nice variation?

Heather, Do you think that making this and freezing this is possible. I was wanting to make this but not wanting to can it right now. I was going to cut the batch in half if i can not freeze it. Thanks.

Did you hot bath the onion stock or pressure? It sounds very good, thank you for all your time and help.

Hi heather, looks delicious but how do you use this please

Heck, the Ball folks tell you to add butter to jams and jellies to prevent foaming. Aren't they supposed to be the experts? So there.

Hi. It looks like you never brought this to a boil or a simmer. Is that correct? Also, have you tried doing this in a crockpot? I was thinking that would work well.

Can I use olive oil or coconut oil instead of butter to caramelize the onions? I don't mind the butter, but my sisters are vegans and I would like to make it so for them if possible....Thank you in advance!

Looks delicious!! how long do you keep your items canned for? I heard / read that the ball jars now have a disclaimer that they can only be used for up to one year. Curious on your thoughts on this.
I finally saved up enough to get a big enough pot to begin canning! Soo excited..it feels like Christmas :)
    Thanks in advance!

darcy jean well, i just started to can in March...... can you believe it? It is addicting. But from what I have read, heard, listened to..... from both sides.... it appears they kept the same sealing agent, but they changed the thickness. they will not confirm or deny. so.... i am actually in the process of saving money to buy Tattler lids, in bulk, and giving those a try. as for right now, my lids have not given me any trouble. i have only had 2 jars not seal on me, due to me forgetting to wipe the rims when i was first starting out..... and 2 that puckered on me, because i tightened the bands to tight. lol so far no popping, but i think i may move to tattler..... just for the money saving/reusable aspect alone! You are going to absolutely LOVE canning, Darcy!!!! I am super excited for you!!!! Whats the 1st thing you want to can?

I am soo excited...I am nervous that it will become too addicting and I won't have enough space in my kitchen haha.
The first thing I am planning to can are apples! My boyfriend and I went apple picking last weekend and I want to can them before they pass their prime :) Expect many questions from me in the future as I go through the whole learning process hahah. And I can't believe you've only been canning since March! You are such a pro now! :)
