The problem with the Sydney aircraft carrier is that you were to high, to off center and a bit to quick. The winds keep pushing you off center and foward therefore increasing speed and making a bolter, you should have been lower and slower.
Tip: There is no set landing speed for carrier landings, you should be using your throttle primarily for controlling glide slope not pitching with the stick. Trim to maintain your AOA indexer and stop trying to flare and make the hook catch. Watch some of the DCS World Case I recoveries and you'll rocket your score up!
For crosswinds turn into the direction of where the wind is coming from. If it's a crosswind from the right for example turn with aileron to the right and apply left rudder to keep it centered :D if you come in too slow with a crosswind it will blow you around quite a bit since the wind applies more force on the plane than the flight controls will let you correct with since the controls are less sensitive and effective at lower speed.

Do some private pilot routines. There are plenty of simmers that will actualy teach you how to fly in MSFS. I'd say that taking your PPL license for real is a worthwile experience too Trev.
I've had mine for 2 years and I'm getting giddy watching him flare just a touch too early and picking up a little speed toward the very end of the carrier. Been known to do that a time or 2 in a Skyhawk and porpoise in my younger years.
Trev you should really try and play DCS it’s a very cool open world Air Combat simulation game with different military planes to play. Just a suggestion

I was thinking the problem is your communications are out, therefore you should do a flyby of the carrier for two reasons: To look for obstacles on the runway, and let the carrier know you're coming.

your nose raises too quick on wire catch, try once you get caught by wire, to force nose down. push the stick forward
