Hi Maggie, another great recipe. I like your point about not overcooking it. It makes a world of difference as far as taste and texture. Standard to sample it to get that correct. That is why the old orientals saying is never trust a skinny chef. Not knocking you. ❤ your recipes. I made your famous char siu and it is still my favorite. I have finally found the right cut to get it very fat like I like it. It’s like Jung tai the fat part is the best part. I bet you can figure out that fat pork is my favorite. I guess we are real foodies. Thanks
