  • Melt white sugar in a heavy based pan . First on a high heat and then reduce the heat as the sugar almost starts melting completely. It’s important to keep stirring gently so u get a nice uniform colour .
As soon as it becomes golden in colour n all the sugar has melted turn of the heat . Cool the melted sugar as shown in the video . If u try to drizzle and make designs with the hot syrup the designs will just spread and won’t look beautiful. Once the sugar gets too cool you will not be able to drizzle it so you have to work fast .
I have greased a foil paper and drizzled my decorations on it.
Wait for the decorations to set . Remove and store in airtight containers. Don’t put one on top of each other as they may stick , put foil paper in between . Store in the fridge if you live in a hot place or just in room temperature .
U can also store the pulled sugar deco in an airtight container too . Just cling wrap before you put the lid on ,will last a day or 2.
For the sugar bowl I just used a small bowl , covered it with foil paper n greased it . Then just drizzle the melted sugar first one way and then in the opposite direction leave to cool . Remove the bowl first and then very carefully remove the foil. And there you have your beautiful sugar bowl .
For the hazelnut spikes all I did was to stick a tooth pick in the side of a whole hazelnut and dip it in the slightly cooled melted sugar and lifted it gently to create the spike . When set just gently pull out the toothpick.
