The various multiple-select options are handy in the linetypes box. A note, I find specifying an arrowhead is much more effective for Leaders in the DimStyle Arrowhead settings, unless the Ellipse or Open Dot is better for one's discipline. After 40+ years in Architecture, I am all about Annotative, so I can set the scale flexibly.
Yes, AutoCAD has changed a lot! Although if you worked in AutoCAD 2009 - in 2 hours of trying you would remember how... It's like I looked at AutoCAD 2025 for MAC for the first 2 hours, like a ram at a new gate. But then my hands started working by themselves. Now I'm not even ready to go back to the Windows version. Because in MAC you can work even without a mouse...

I hear about an open source tool named Onshape, wich is similar to AutoCad, and it seems to be cheaper,even free. I do not know details, but i have seen people use it to programm plasma cutters. Maybe worth checking ?
Personally I use Rhino 3D. It is the standard in maritime archaeology by now. More than powerful enough for us, does the same things, but is a fraction of the cost. Educational license is $200 or so. And yes, there are lighter cheaper forms of AutoCad out there, but I have no experience of them. Oly draws in AutoCad infinitely faster than I do in Rhino, I have to admit. The problem is not with Rhino, but with the operator in this case.
