1 Cup of Red Wine Vinegar
    1 Cup of Hot Water
    ¼ Cup of Granulated Sugar
3 Tsp. of Kosher Salt (divided)
1 Large Red Onion (peeled and slice thin)
    1 Lb. of Ground Beef
1 (4 - ounce) Can of Diced Green Chiles (drained)
    1 Tsp. of Ground Cumin
1 Tsp. of Black Pepper (freshly ground)
    1 Tsp. of Vegetable Oil
4 Slices of Pepper Jack Cheese
4 Hamburger-Sized Potato Rolls (lightly toasted)
    Steps
In a medium bowl, whisk together red wine vinegar, hot water, sugar and 1 tsp. of kosher salt until salt and sugar are completely dissolved. Add red onion, pushing down to submerge. Let onions marinate for 20 to 30 minutes at room temperature, or up to 3 days in the refrigerator.
Preheat a grill, grill pan, or cast-iron skillet over high heat. In a large bowl add ground beef, diced chiles, ground cumin, black pepper and remaining 2 tsp. of kosher salt. Mix just to combine, but do not overmix. Divide into 4 equal patties.
Brush pan with vegetable oil and cook burgers 3 to 4 minutes per side, flipping when first side is well-browned. During the final minute of cooking, top each burger with a slice of cheese and let melt.
Transfer burgers to toasted buns, top with pickled red onions and serve immediately.*Tip: Speed up pickled red onions by using clean hands to gently massage the sliced onions in the pickling liquid for 2 to 3 minutes.
