Hey Matthew, I just made your beef stew. I'm not one to use OMG! lightly but, OMG! I've had a lot of beef stew over my many years, some good, some so-so, and a lot bad, your recipe has brought beef stew to another dimension, another realm. I thought baking it was a bit crazy, but you proved me wrong. Absolutely fantastic! Go take the weekend off - you deserve it.
I did it all on the stovetop and it came out really tender. Just make sure it's lightly simmering, and scrape the bottom every so often. Add more liquid if you're afraid it might burn (heat it up first). I started with more liquid, so I didn't have to worry about that, and I just kept the lid off for the last 20 min to let the extra water evaporate.
This is in my oven cooking and will be ready soon. Smells amazing. I usually make beef stew in my crockpot but wanted to use my Dutch oven this time. I landed on this recipe. I use my own seasoning blend, no flour or cornstarch. The thickening will come from natural reduction of water and starch from veggies. I seared the meat as indicated in olive oil instead of canola oil. The caramelizing of the onion and addition of tomato paste took it to another level of flavor. I don't cook with wine so substituted balsamic vinegar. I did have to use more beef stock (I use better than bouillon) for a total of 6 cups. I also used chuck roast cut into chunks. Definitely will make this way from now on.

I watched this video a couple of days ago and made this today. This stew is 🔥 👨🚒 🚒 🧯. I cooked it on top of my range, stirring every 15 min on low medium low heat.
Haha yes! that's my bad! I meant to say "fresh or frozen." Most people only have frozen at home. not fresh. But even frozen peas basically warm-up in seconds in the hot stew. so both work great!
@Black Buick not too much difference! the lower heat and the time is what makes the meat soft. the benefit of using the oven is that you don't have to stir the stew and you won't burn the bottom. if you want to use the stove, you totally can, just make sure to not let it boil (only low simmer) and you have to keep strring it. :) good luck!
The last time I had home made beef stew was about 50 some odd years ago when my mom would make it. I’m 64 and today that’s all gonna change cause I’m making for the 1st time. My wife and I are making it together so if doesn’t come out good one can blame the other 😀

Thank you for the definitive tutorial on beef stew. Mine were always a tough and stringy endurance test followed by 20 minutes of flossing. Will make a pot, according to your instructions, for tomorrow's Sunday dinner.

I made this Matthew!! I didn’t have potatoes, so I used mushrooms. I added the peas at the end, almost forgot, and it was so pretty! My stew meat was already cut up; but I cut a touch smaller because I remembered what you said about the right size bite for me (and my boys). It was a huge hit with fresh baked bread, that was still warm! Oh, also I didn’t have red wine, but there was a Guinness in the fridge so I used a little of that. It turned out so yummy🙏🏻 Thank you!

Planning a beef stew tomorrow for the holiday. Was looking for a few ideas, and this looks really good. Lots of good advice and confirmation of things I've noticed , the browning two sides then sauteeing until the rest is browned and looked good! Just like I've made. Also, I always see burned bits and I try for more mahogany, but always see the burned bits on shows and you confirm it's normal, so tomorrow I will be more concerned with effective browning. Nice job!

Wow, this recipe was as close to perfect as it could be! We'll have to add more liquid since we love gravy, but it has everything we love. Even though our old method was pretty close to yours, going from a Dutch oven (our old preferred method) to a slow cooker (to store less cookware), it seems we need to go back to a Dutch oven for perfection. The next time I I will go to anything make anything I’m gonna go to your website and do it properly my beef stew is so sad I don’t even want to serve it to my husband. Although he would eat anything and be never criticize me. I’m the one that says this sucks and then he will politely agree. He will eat anything I make because its not takeout

Well today was my 11th time making this stew and it came out great again. The hour and a half in the oven is definitely the secret.

This was Delicious, only thing i added was a tablespoon and a half of Worcestershire sauce to the beef broth.

I always add a bit of sugar to enhance the flavour and a bit of soy sauce to mine. Believe me it might sound a bit strange but it tastes even better!
