Spanish adobo flavors are chili's and vinegar. Since Filipino adobo is mainly vinegar and soy sauce the Spaniards called it adobo due to the vinegar. The islands of the Philippines had their adobo long before it was called adobo and came from the indo-malays and Chinese influence. The main part of adobo is vinegar and not pickling flavors, as Spaniards uses vinegar and chili's to preserve and not pickling brine. Same with Filipino adobo but it's vinegar soy, garlic/onion, and black pepper( which is far more Chinese and indo/malay than spanish). The only thing Spanish about Filipino adobo is the name.

No it is not, adobo preserves so we'll do to the sugar cane vinegar sauce made up of sugar cane vinegar, soy sauce, garlic cloves, onions and bay leaves, you boil the chicken in that mixture then when chicken is done remove the cooked chicken from the sauce, then you reduce the sauce to be thicker. Spoon over chicken and enjoy
Make that with urfa biber pepper, and take the recipe back a few millennia. Also, a Sherry vinegar might be better. Those pickles are going to contain calcium chloride, and I’m not sure what effect that has on meat.
I think you missed one of the most important ingredients for an adobo this day an age which is soy sauce, no need to add salt anymore when in its marinating period.. This will give it the perfect amount of spicy, umami, and savoury flavors

Our Amah in Singapore was a Filipino, beautiful woman who was highly educated and an educator in her own country. She made more money working as a maid in another country than as the Principal of the school she ran back home. We loved her. Will never forget her Chicken Adobo. Soy, cider vinegar, ginger and onions. Bring that to the boil and add your thighs. When cooked, spoon over white rice. It doesn’t get a lot better than that 😋

Second, I also have a Pyrenees and it is bred pooch for a farm that can consume anything much larger with no issues. Chicken might taste good, but the taste of anything burned if not for me, even just the sight of the black and burned adobe paste was enough to know I would not have eaten that. Be careful with giving the dog chicken bones. Birds have hollow bones. They can shatter and seriously hurt the polar bear.
