You tried holding low temps with the top damper wide open which is a no go and why you kept climbing and too much wood for lighting it in the center. Each piece of wood catching is going to raise your temps 20-30 degrees for at least 10 minutes. The original method you mentioned starting on one side allows for both longer cooks and to not catch all the wood.
