  • How to hang ribs on the Oklahoma Joe's Bronco Drum Smoker
    Hanging ribs is one of the best ways to get a real deep fire and smoke flavor profile on the drum smoker. The ‎@OklahomaJoesSmokers come with the meat hanging kit for the Bronco so this makes it easy.
    Typically I hang about 4-5 racks at a time, but you can hang safely between 10-15 racks. Hanging without the heat deflector is the way to go as well, that's why it's important to start a small fire. I love using the minion method for this one. Matter of fact, there are very few cooks that I run in the Bronco without the minion method.
    Today I hung baby back ribs with a little homemade rub.
    Rib Rub
    2 tbsp Kosher Salt
    2 tbsp Coarse Pepper
    1 tsp Ground Sage
    Smoke for 2 hours Hanging and then wrap for 1 hr. Keep Temps at 250-275. Preferably 250° unless you like fall-off-the-bone ribs.
    What I've presented to you is a very bare-bones recipe and method. You can complicate it any way you'd like. I will never recommend spritzing, saucing, or any of the Fluff Stuff. Keeping it simple is how I've helped hundreds of people get into BBQ and minimize failures.

    So you leave the exhaust wide open and then adjust with the intake, correct I have always had a heck of a time getting the temp stable

      That's typically how I run my Bronco. Also, start your fires smaller. Comes up to temp slower but better control. Come to my Facebook group: Operation Community BBQ

    Well I’ve been interested in a barrel smoker for sometime, and have been researching however; videos up to now appear to be producing what looks to be dried out ribs that are burnt almost half way up the rib. With the exception of your video. Yours looked great from end to end not dried out or having the appearance of being burnt. Is it because you had the ribs off set from the fire below or do you think I it was the brand of barrel smoker?

      The brand of the smoker is important, but that's not all. Your temperature control is important as well. Not all drum smokers can hold steady Temps because of their design. I can maintain 250° on this pit for as long as I have enough fuel. How I setup the fire is also a huge factor. A small fire gives you infinite control over your operation and drastically affects your results.

    Did you hang the ribs opposite side of the charcoal. Also if you do more do you start your coals in The middle and heat from the center or light from the side and burn across the charcoal

      Doesn't matter where the neat is really but I start the fire on an edge so the fire is very small.

    How do you cook your ribs if there’s 4+ racks in there? The ads for this barrel show 9 racks hanging but the 2 hour/ 1 hour won’t work like that. Curious what you do.

      I've hung 16 in the pro, maintaining 250-275 and spare ribs took just about 4 hrs. No wrap, just smoke. At most spares take me 4½ if they are thick

    Bro, I love my bronco Pro Drum smoker have you messed around with the Billows blower yet? I'm about to give it a try for the first time this with the blower this weekend.

      I've run my Bronco for 32 hrs @250 with 1 load of charlogs. No Mods, no assist. You don't need it.

      I live in a higher altitude and have had issues with it going out or keeping it low / slow occasionally I would have to hit it with a Milwaukee bench blower to raise temp back to 250 so this is why I got the blower. not as bad when its hotter outside but more in the winter@@CookinWidKunchi

    Follow u on the tok man. OK Joe bronco is the only product they make that I like. Been thinking about getting the XL version. Great cook. I'm gonna have to try that sage. Makes sense tho because I love some jimmy dean sage breakfast sausage so I know tge ribs are killer

      Get the drum, set it and forget it especially this brand. Come to my tiktok I have tons of tutorials. I've run this for 21, 26, 32 hrs with one setup of charcoal.
