I once had aspirations of being a chef, known the world over. Today I am quite content with sharing my passion with the world through the power of the internet. Not for the love or the need of money, but more so to express my creative ideas to help others expand their knowledge. In turn I intend to grow as I constantly research and discover new ideas to bring to my audience. I grew up in a humble countryside town in the parish of Manchester, Jamaica. At an early age, I became the assistant cook at home. Being the oldest it was more my duty than my choice.

I'm worried about warping the slate with water on a hot surface. Do you turn the griddle off before adding the water and scraping? Thanks.
I turn it off just before. That will not warp the griddle. You would have to submerge the griddle to cause that

Love everything about this cook, because I do the same thing. The only thing I would do differently is use a aluminum foil ball vs that wore brush. It can leave wire pieces on the grate that can get on your food. Love the videos keep them coming.

I can't tell you that. It depends on the size of your bird. Use a thermometer and stop cooking when it gets to 165° in the breast
Unless your pan searing the inside you might wanna put it in a cast iron pan with some butter and trow it in the over cuz it looks good just termite raw

Sweet. A quick and clean smoke on those sausages. I'm getting tired of "smoked" everything off the grill. This looks like a nice, subtle amount compared to the pink ringed roasts that I keep pulling off my grate. After eating like that x number of times already this summer, your method seems about right.

Did you hang the ribs opposite side of the charcoal. Also if you do more do you start your coals in The middle and heat from the center or light from the side and burn across the charcoal
Doesn't matter where the neat is really but I start the fire on an edge so the fire is very small.
