Fantastic recipe book to cover all types from white to gluten-free to rustic. 6. Can make 1-2 lb loaves...gives me anxiety adding ingredients while in the machine...remove the pan first so you don't spill in it...much easier.
The stainless steel is just the oval curtain that hides the rest of the machine, its motor, drive belt, printed circuit computer boards and switches, heating element. It is a dress that descends over the interesting parts. It might just as well be plastic. It won't crack or melt as plastic might. It does stain as plastic will not. It conducts heat as plastic will not. It might be heavier than a plastic "dress".
If I wish the machine to do the kneading only and shape and bake the bread in oven, should I use the dough function or should I use the bread function and take the dough out after kneading?
I think it depends on which kind of bread you’re making. For artisan, choose dough function, because the bread machine doesn’t bake that type of loaf. For varieties that the machine can bake, I’d choose (for instance) white bread, then take the dough out after the machine’s kneaded it and it’s risen, and bake it in your regular oven.

we need one with custom setting for our own recipes and a two paddle pan.
