Darren, knowing you came to America after Diana's passing, I hear you say you've been in the US for over 20 years, and my heart dropped. Time passes to quickly. It seems like 2 years, not 20. It is an art. It's difficult to get EVERYTHING cooked properly and served hot. Best to go to a hotel or cafe (Wetherspoons in London.)

I read that one differently: Was the Queen ever mad *FOR* one of your dishes. I went back to the video and rewatched it. I read that as:was there a dish of yours that she loved and wanted more of, Not angry about and didn't want ever again.

I recently discovered your channel and I have already made the Queens Scones and we loved them. Have you ever made Loquat jam? It is a fruit that grows all over Texas and it is largely unheard of. I believe folks here are missing out on an absolutely delicious jam. We make it once a year when it's in season and we always run out before the next harvest. Love the videos. Mangia tutti!

It's ironic. I didn't care for catering because it was so dull. Everyone ordered the same menu over and over again. 😴
I preferred cooking in a restaurant because it was more exciting. We had daily specials and a variety of customers to keep us busy. I left cooking professionally before COVID. Hope you are doing well and staying safe!

Hi Chef! You are such a beautiful positive force in this world. My question for the next Q&A is: do you have any favorite pieces of food history or food trivia? Where do you get your inspiration for new dishes/recipes? And do you have any favorite cooking shows/movies?
Also, I’m Chinese, and I’m wondering if you have any favorite Chinese dishes? My favorite is fish/pork soup dumplings, where fish is used as the dumpling skin. It’s probably one of the most unique dishes from our area!

Chef, here is a tough one but worthy! With all the state dinners, all the fancy meals and exotic ingredient. If you had to recommend a 3 or 4 course meal, but one that is practical, what would you serve friends at a dinner??? (Don’t need all 4 courses I suppose, but what would be your primary meal served?)

Wish I still lived in Dallas, would enjoy working for you. I have a question and it may be too personal, and if you don't want to answer I would completely understand as to why. From what I understand, after Princess Diana passed, you stopped working for the royal family. In my own personal experience, losing someone that you are that close to is a tragedy and it really puts your life into a perspective. You have been cooking for these people for many years, you have gotten to know them in a personal way that people outside of that lifestyle will never understand. I'm sure they feel like family after a while since you care for them and obviously want only the best for them. So my question is this, after that kind of loss, did you lose any of your passion or desire for cooking and if so, how did you regain it back?
As I said, it's a very deep question and one that may be uncomfortable to answer to which I would understand completely if it's not.
What is your favourite memory of Diana, William and Harry? Love all of your videos!! ☺️

Love your videos and recipes Darren. Yes please post a video for bread sauce. Was a staple growing up and only my aunt made it. When asked her make for Xmas last year, she looked at me sideways and no one eats that any more but you. It is actually delicious and a good way to use up old bread and not waste it.
