Well, in the light novel Roxy explains she had a friend in the University of Magic who found her husband while exploring a labyrinth, and she really fell in love with that idea. I can't recall if she says the thing about the "childish expressions", but the rest is even more prophetic. Which, I'm sure, is the reason they cut some of it (since the time between events is way shorter in anime form... In the books, it happens so far apart some people would probably forget). The whole fantasy also included that one of the man's teammates would die and she would console him. It just so happens that teammate ended up being Paul, haha...

I always say that if you want to know more about MT or want to start reading the LN start from the first volume because there is a lot of cut content and foreshadowing. I'll also have to start using your video to show that. Some of that foreshadowing pay off on the Anime but some details are very specific to people that read the LN in my opinion. Hell, the first report of the police asking for 2 missing people makes sense if you read the entire LN up until the last volume (26). The studio that did the show clearly loved the source material to Include that level of details.

LN spoilers: She's training at the sword sanctum with Eris. She found out how deeply in love she is with Rudy, so decided to go duel him and drag him back to Eris just to show how he ain't all that. Only she gets humiliated by Badigadi then watches Rudy blow him up in a single hit. Then she and Eris become friendly rivals since she now sees why Eris is training so hard and sees what she means by wanting to get stronger for him.

There was no grooming. You realize it took 11~ years for them to meet again in the story? Rudeus was basically a different person when they reunited, which is why Roxy didn't even recognize him (really, she thought her savior looked a bit like Paul). And Rudeus developed feelings for Roxy all on his own (basically since day one).
