    I am one of those people who loves lemonade of all kinds, but it can't be too syrupy sweet or it's a "no" for me. So - I think some nice tart lemonade paired with that lovely edlerflower essence/cordial would be divine (over ice, of course). And I wonder if some carbonated water added to it would make a nice fizzy healthier soda maybe? The possibilities really are endless... I second the iced tea comment, too! YUM

    I love making elderflower cordial. It freezes really well if you're not sure about canning it. Also, freeze the lemon slices too. Either add them to the cordial later, like an ice cube, or put them in a jam. Lovely stuff!

    I have made elderflower jelly by thickening essentially that cordial, minus the citric acid. Tastes like flowers smell!
    I think St Germaine is an elderflower liqueur....
    I dry ALOT of the flowers and add to teas.
    I do not rinse mine.

    Agreed never to rinse the elderflowers, but do give them a decent shake before adding them to liquid; gets the bugs out so you don't see dozens of them floating to the top in your simple syrup.

    I was so excited to see this! I love your channel and every time you post a video its like catching up with a friend. I use elderflower a tonne in the summer, I only use the lemon peel/zest not the juice in my cordial and find that works really well. I’ve never drizzled it on pancakes, but I do make a lemon drizzle cake where I add elderflower to the syrup that gets poured onto the hot cake. Elderflower works beautifully with gooseberries (do you have those in the US?) and I fold it into cream or yogurt to have with fresh berries. I know lots of people don’t drink alcohol, but if you do - add a drop of elderflower cordial to a G’n’T and it is amazing on a hot summers day. 😊

      The one I made that has less lemon juice, totally! Maybe could cook it down more to thicken it up

    Heather, this elderflower cordial looks fantastic! I'd totally use it for making a nice flavored water or even a nice iced tea. I bet it could be used to make ice cream or sorbet too. Thanks for sharing the process and the outcome. 💚🥤🧁🍵💚

    It is divine! Isn't it? :D I love making this. I do it yearly but i had to cut down my elderberry in december because it was growing wild and so tall i couldn't reach the flowers. I dehydrate the flowers to use it in tea mixes. :) Really good. So glad to see this on your channel :) Memories you know :)

    My cousin does a LOT of unique Jams and Jellies...She picked it up from my grandmother years ago and one of the things she does is Kudzu Jelly. I believe she uses the flowers from the Kudzu vine to make it, kind of similar to how you made this recipe. Honey Suckle is one I tried years ago but it came out as more of a Tea.

    Hi Heather. I just watched this video and when it was over it took me straight into the honey harvest video. At the end of that one you asked if anyone had any other ideas for what to use Beeswax for. A lady I know used to use Beeswax and Elderflower and made lip balm. She used essential oils as the fragrance. Not sure what else was in it but that might be something to look into.

    I made my elderflower cordial last week, mine is to be diluted to drink (it's one of our favourite summer drinks) and "only" has one Kilo of sugar. I steep the elderflowers with the water, zest of 3 lemons and an orange overnight before adding in the lemon and orange juice, citric acid and sugar, as it gives a stronger elderflower flavour:
    The recipe I use is:
    24 flower heads
    Zest and juice of 3 unwaxed lemons
    Zest and juice of 1 large orange
    1 KG white sugar
    1 heaped Tspoon Citric acid (you might need more of using bottled lemon juice?)
    1.5 litres boiling water:
    Pour the 1.5 Litres of boiling water over the elderflowers and citrus zest (I usually rinse them) and leave overnight to infuse. Add the citrus juice (150ml) and strain through a cloth/muslin into a pan. Add the sugar and ctric acid and heat. Simmer until the sugar is dissolved and hot pack into hot, sterilised jars/bottles. I water bath for 10-15 minutes, so it lasts longer (up to a year!)

      @@SageandStoneHomestead We're kind of big on cordials here in the UK but not sure if you get them as much in the US? I made ginger cordial today as the other half goes through bottles of it. Just waiting on the blackcurrants now to make my favourite autumn drink - blackcurrant cordial (drink it hot on a cold autumn day). 😋

    I'm sorry for being so naive. My neighbor told me I have lots of elderberrys, but I don't know what they look like. I'd hate to pick something I don't know is safe to eat. Can you show me a picture of what they look like?
