Finally found your wishlist.
I LOVE my electric canner! I have had it over 5 years. we went from a family of 7 to growing into a home size of 3 now. I dont use the big canners much anymore. I use the electric one for everything if I am doing a small batch of jam I use will pressure for 5 minutes, I have canned left over roast and vegetables. I use the longest canning time for left overs which is always meat. And I never can anything that has been thickened with flour, I have realized you can thicken with over cooked potatoes and can that up. I get great seals and have had very few fails, mostly it was learning to use tattler lids. I have things that are on my pantry shelf since 2019, still sealed. Use your sniffer and best judgement on that type of thing.

Try wiping with olive oil instead of water to get hair off. Seasonings really stick then

15:51 …good stuff, Heather! I don’t peel root veggies, either. Something I learned while working in a grocery store back around 1997. More recently, in my cooking, I’ll slice a whole lemon, removing only the seeds, and add it to just about anything meat, fish, poultry and veggie.
Our Amish store usually has some kind of citrus, next time I see lemons I need to pick them up! Thanks!! :)

The electric pressure canner also saves on electricity costs.
How do you set your meat to rest after butchering (esp. goat)?
Either in a plastic bag or a plastic tote. No water. We don't "dry age" but we do like to rest them without soaking.

I know for the chicken and Quail it's about 24-48 hours.
Yes! 5 days to a week is what we have done. Sometimes a little longer but by 2 weeks we try to deal with the meat.

I have the Carey version of this. Same exact one, just before they rebranded as Nesco. I LOVE it. I think what I might love the most is being able to wander off and do other things while it runs. The beeping is VERY loud, but I kinda like that because I can hear it all the way upstairs or even out on my porch lol.

Very interesting!! An electric canner would have been great last month when the last 'living' burner on my stove died!! Fortunately the new burners I ordered came quickly while my jars of rabbit waited in the freezer. Your finished jars looked beautiful! Also enjoyed seeing your freezer so fully stocked!! Rosered Homestead here on RUclips tested the Nesco, Instant pot Max and the Presto electric canners. She bought the probe that the USDA uses and tested each one using their methodology. Now she is at 15 lbs of pressure at around 5k ft. in elevation and showed when in the process the kill zone was reached and the amount of time it was maintained. You being at 10 lbs of pressure there would be some difference but no one science minded at your elevation has done the same testing. It was a great series. :) If I remember right the Nesco did a really good job where as the Presto was on the struggle bus on a few items.

I have had that canner for a couple of years. I am glad they fixed the instructions. I had to go online to get the updated instructions, because the ones that came with the canner were very confusing. I like it for small batch pressure canning.

I have 1 fridge in shop/pantry, 1 upright freezer, 2 small chest freezers ( need seasonal). Then 1 fridge in house, plus 2 apartment fridge/freezers (as needed).
1 chest freezer still full of nothing but tomatoes! Lol
I know what all of that is like!!! I'm working on cleaning out one of the smaller freezers that still has tomatoes from 2022!
The USDA does not approve or disapprove any canners. The claims usually says something like "meet USDA safety guidelines". Unfortunately, I don't think there is going to be testing of much of anything anymore. They want us dependent on the store. That said RoseRed Homestead here on youtube has done some testing with the electric canners. Not sure if I want to trust them just yet. Would love to cause I agree that it is much easier to work with and do a bit smaller loads.
Gotcha! I thought I saw this one was approved by them some time ago, but I might have got the verbiage messed up. I agree I think testing has ceased. We love Rose Red!!! ❤️
Great video heather. I use my electric pressure canners in addition to my stove tops just to expand the number of things that I can be doing at one time. I like being able to walk away if I need to walk away. And I think I've heard that goat meat is the most commonly eaten protein in the world. But don't quote me on that ask Google.

I have always used a presto pressure canner on a gas stove. I love it. I usually have two going at the same time. I have thought about the electric one but after reading how long you have to wait for let down, it's the time factor for me. Love watching you and your farm. I have a homestead farm as well. We just tried rabbit for the first time two weeks ago. It was great. We are butchering two goats on Tuesday. It will be our first time. 😊

I bought the Nesco a year ago and have canned quite a bit in it. I agree with how loud the beep is! The steam being released for as long as the canner is going is irritating, so when the weather cooperates, I run it out on my 3-season porch. My pan developed a hole and the water went everywhere. Unfortunately, I was canning $25 of salmon and lost it all, as the pressure didn't hold. The company replaced the pan.
Oh I am so sorry! Did you use vinegar in the pan? Vinegar has corroded a few of my metal tools.

Thank you for this. I had goat the first time when I visited Africa at 18 and it was absolutely delicious and I haven’t had it so delicious since or outside Africa the times that I visit friends. I hope to one day have them to grow for meat. Thank you again for all you share.

I love my electric pressure canner! Set it and forget it! 😊 what does goat meat taste like? I’ve had rabbit, venison, wild boar, alligator and bison. For some reason, never goat!
It's like a cross between beef, lamb, and venison. It's clearly a ruminating animal but also the fat reminds me of pork fat more than beef fat. Very good!

No I have not. I asked my local breeder to let me know when he has a batch he's hatching and to reserve me 80 to 100 so I can do a miniseries like that! I have a feeling it will be early spring.

What age do you butcher your Nigerian Dwarf goats?
That guy was just over a year old. You want to wait 8 to 10 months at least. Up to about 18 months for tender meat!

Heather, when you shut your canner lid, be aware of where your jars are sitting..in other words try to make sure there is not a jar right under the vent thingy. Not the weight thing but the little thing that pops up when it has full pressure. Hope that makes sense. Pints don't matter but have read where some have issues with qts. 😊

I've never had an issue but a few have said they had trouble with the jar this is under the pop up thing not sealing, but ya never know for sure what they did, lol
