I've made this and despite not being vegan, I prefer this over the regular stuff!! Quick tip though... coat the bell pepper in some kind of oil... olive oil or sunflower oil works best. Char the bell pepper some more than shown here. Let the skin turn properly black at most parts. Then as soon as you are done charring it, put it in a plastic or paper bag or an airtight container and shut the lid. 1. Makes the skin much much easier to remove and 2. Gives the sauce a wonderful smokey flavour!

And if you are not vegan, put some freshly grated Parmigiano Reggiano on top 😋

I would suggest throwing the roasted peppers, AND onions AND garlic all in the oven together so the flavors get all that togetherness, and the roasted onion has an amazing flavor compared to the sauteed (its a subtle difference but i think it brings it to a whole nother level!!!!)

Next time you roast peppers over an open flame, put them in a bowl or something and cover it with Saran Wrap. It’ll “sweat” and make the skin fall right off!

I tried this yesterday! The paprika tastes absolutely divine, especially with some basil. Unless the paprika is huge or you're using a lot, use HALF an onion. I put in a whole onion and the taste was a little..oniony 😅 i put in a sweet potato but i think a normal potato balances the flavor. Sriracha brings a nice heat to it. All in all, liked it, maybe would try again with some changes.
My mom makes this all the time, but she adds walnuts and basil to the sauce and on top of each plate she puts a dollop of almond ricotta and some poppy seeds, it’s unreal

I didnt realize that you could make sauce out of different veggies. I wonder how a beet sauce would taste. One time I made beet ketchup by roasting onions and beets, and then blending with a little salt and sugar. Was very good

You can also rinse them in ice. When we cooked poblano peppers at my old job we would roast them then dip them in cold ice water to wash them.
