Sir thats not a beef meat or bone. Thats was Carabao or buffalo meat. R & J is famous for that bulalo in Mandaluyong near the City Hall. Carabao meat is less oily and in our province in Infanta Quezon we dont usually put pechay in our bulalo.

Having tried all three variations- ceviche, kinilaw, and poke, for my palate, kinilaw wins hands down. I'm glad that here in Cali, I can find pretty much most of the ingredients I need especially kalamansi whenever I'm craving for one. I've experimented on different types of fish from halibut, rockfish, dover sole, but find tuna to be the best. I would love to visit that place when I visit back someday. Best of luck!

Bulalo is good yummy and delicious nbut dangerous, many says it cause your nlood high.. dont eat too much...moderate lang..yung kinilaw naman, good to reduce high blood because of vinegar, garlic and onion..i love kinilaw especially , dilis or tuwakang
Hi Marshall, thanks for another great vlog. If you can (are allowed to) , try going to Mahogany Market in Tagaytay. You can commute to Tagaytay by getting a bus at PITX bus station, near Mall of Asia. At Mahogany Market, you will find lots of stores selling beef (cheaper than in Manila), fruits, veg, local ground coffee. At the 2nd floor, you will find lots of stalls (like a low end food court) selling bulalo. You can get a set meal, good for 4, for 1k pesos (pre-covid). It has rice, bulalo, veg & tawilis (small fish native to the area). You can also go to other tourist spots in Tagaytay - good for a day trip or short weekend away. Btw, I heard from friends that there's a Chinese tour group which will go to Phuket in Thailand in early October. Thailand will open to tourism but there are many requirements for the STV (special tourist visa). You may want to check it out. Good luck & stay safe! 😊👍

There are stalls in the market where you can pick which type of coffee beans (Arabica, Robusta, etc) and have them grind the beans for you. Seems like there are other ppl encouraging you to visit Tagaytay or Antipolo. Btw, there's also a nice Indian resto at/ near Jupiter street in Makati. Not as posh as Shangri-la, but quality eats. Can't remember the name of the place, but the chicken vindaloo was good. Just tell them not too spicy! Cheers - I enjoy your food reviews. You're like Mark Wiens, but not pretentious. 👍😊
as a former Pinoy (short term for Filipino) expat, let me tell you, Sir that Kinilaw works best with the local San Miguel Beer and Tuba (wine coconut). The locals primarily from Visayan region used to get wasted on Saturday nights or whenever there's special occasion. You should go out more and socialize with Pinoy locals that you can trust and get along with. Then you'll see what I mean.
My friend I would love to socialize with people but we have been in some sort of restricted lockdown the entire time I've been here. It's absolutely killed any chance of a social life.
The best kinilaw i've ever tasted is in Northern Mindanao, Cagayan de Oro City, particularly. They put indigenous local spices that's not found anywhere: the tabun-tabon, and biasong (a kind of small native lemon, aside from the kalamansi which is optional), plus a lot of chili. Makes my mouth water just thinking of it..Yum!

Yes, indeed, kinilaw has many variants. We have dilis kinilaw in Leyte, made of fresh dilis first soaked in vinegar and calamansi (with a little salt). Afterwards, the dilis is carefully wrapped in clean cloth to squeeze out the liquid. Only then do we mix it with diced ginger, garlic, onion, green onion and (freshly-squeezed) coconut milk, and some chili. I love eating kinilaw only when it is prepared at home by my mother. I can't bring myself to try kinilaw prepared elsewhere.

The best kinilaw-kilawin i've tasted is from Ilocos Kilawen Kaldeng and the Cagayan De Oro Kilawing De Oro and i promise you that it will taste good if you try it, try go to Ilocos, Northern Luzon or CDO, Central Mindanao. And if we're talking Bulalo, the Batangas and Tagaytay is the best i've tasted, so if you ever go in those province maybe try it out too :)
How about going to Eastwood in Quezon City. They describe it a city within a city. In one area there are condominiums, malls, restaurants and SR. It is like BCG but smaller. Nice to move around. Try to check it out, Sir.
At the moment there are travel restrictions because of the pandemic in the Philippines. It's very difficult to travel domestically and even harder to travel internationally.
Another great vid Marahall. They say the population of Metro Manila is 13 million, but in reality it will be closer to 20 million people. The reason for this is the cost of registering births, and many filipino families do not have that money, so there is alot of unregistered births each day. I saw that the kitchen gave you a huge bone and the marrow was BIG. We don't eat it all the time because all that cholesterol is not healthy, hehe. We mix a spoonful of bone marrow with a spoonful of rice and put the whole ensemble in our mouth. Way to go :-)
You can ask guys baking if they have what you're looking for. Because sometimes they are just cooling it in racks before putting it inside the glass things. It prevents it from being misty if it was cooler.

Oyster is very pricy in Manila bro, my father is from Aklan too and whenever i've visit the province they offer a lot of seafood, like crabs, fish and oyster, kinilaw na isda palang na try ko sa visayan region, yung oyster di ko pa na try yan pero mukhang masarap.

@Marshall Butters Vlogs - I suggest you go to Mahogany Market in Tagaytay. The ground floor stalls sell beef/ meat & fruits/ veg. In the upper floor, there are several stalls selling bulalo & other viands. You can get a set meal worth 1k pesos, good for 4. It contains a large bowl of bulalo, rice, veg & tawilis (small fish unique to the area). Very masarap goodies. That's pre-covid, I don't know the situation now.
kinilaw is a visayan dish, visayan preference normally is to add vinegar to the preparation just prior to serving it, for the reason that the fish will taste like vinegar when soaking it longer. some twist to it is adding coconut milk to the vinegar sauce and mixing it with sliced freshly grilled pork liempo🤗
Kinilaw its my favorite and will crave when i visit my hometown in mindanao, kilawin is another dish with bamboo shoot and beef internal organ, it might be different in tagalog, im not sure about
Kinilaw I've read somewhere that it originated in the Philippines and when the Spanish came and galleon trade started that's when it was introduced in Acapulco Mexico by Filipino ship crews. But it was named ceviche in Mexico. Filipinos brought many things to Mexico like coconuts, mangoes etc..
Luzon's kilawin usually has vinegar alone but the kinilaw i know (am from Samar btw), requires removing or diluting the marinade with coconut milk specifically the first squeeze or kakang gata. Restos here go extra by adding mayonnaise but it's just plain overkill.

Kinilaw na oysters is really good! Ive only had it in Aklan. Never see them do kinilaw na oysters in Manila
Oyster is very pricy in Manila bro, my father is from Aklan too and whenever i've visit the province they offer a lot of seafood, like crabs, fish and oyster, kinilaw na isda palang na try ko sa visayan region, yung oyster di ko pa na try yan pero mukhang masarap.

@Marshall Butters Vlogs - I suggest you go to Mahogany Market in Tagaytay. The ground floor stalls sell beef/ meat & fruits/ veg. In the upper floor, there are several stalls selling bulalo & other viands. You can get a set meal worth 1k pesos, good for 4. It contains a large bowl of bulalo, rice, veg & tawilis (small fish unique to the area). Very masarap goodies. That's pre-covid, I don't know the situation now.

kinilaw is a visayan dish, visayan preference normally is to add vinegar to the preparation just prior to serving it, for the reason that the fish will taste like vinegar when soaking it longer. some twist to it is adding coconut milk to the vinegar sauce and mixing it with sliced freshly grilled pork liempo🤗
Try the kilawin with gata (coconut milk). R & J Bulaluhan is 5 mins away from my house.. Best bulaluhan in mandaluyong.

Kinilaw its my favorite and will crave when i visit my hometown in mindanao, kilawin is another dish with bamboo shoot and beef internal organ, it might be different in tagalog, im not sure about
Kinilaw I've read somewhere that it originated in the Philippines and when the Spanish came and galleon trade started that's when it was introduced in Acapulco Mexico by Filipino ship crews. But it was named ceviche in Mexico. Filipinos brought many things to Mexico like coconuts, mangoes etc..
Luzon's kilawin usually has vinegar alone but the kinilaw i know (am from Samar btw), requires removing or diluting the marinade with coconut milk specifically the first squeeze or kakang gata. Restos here go extra by adding mayonnaise but it's just plain overkill.

the calamansi is actually used for making a sauce for the bulalo.. try to mix calamnsi and fish sauce with a small portion of chilli..

In our place kilawin is pork( skin and fats ) version of kinilaw( fish ). For westerners it’s called salad. 🙂
Its not Salad in western, its called *Ceviche* , they have their own version in latin america soo kinilaw is not that unique to them.
