- Paratha is a delicious flaky layered Indian flatbread. Learn about my secret ingredient to amazingly soft layers that stay good and fresh for a long time. ✅ PARATHA INGREDIENTS
2 cups Atta durum whole wheat flour
½ teaspoon salt
½ cup milk
¼ to ½ cup water slightly warm
2 tablespoons oil ghee or combination
Extra flour or super fine semolina flour to use between layers
✅ INSTRUCTIONS
0:31 Combine all ingredients and knead into a smooth dough.
0:57 Divide dough and roll into round discs.
1:21 Roll and fold dough few times to make triangle, square or round layered dough portions, making sure to oil and flour in between layers.
1:46 Triangle Paratha
2:00 Then roll the layered dough evenly into flatbreads.
2:27 Preheat skillet at medium high setting.
2:30 Cook parathas applying oil, until golden brown spots appear on both sides.
3:12 Square Paratha
4:34 Round Paratha - 3 Ways
6:33 Cool parathas and crack them slightly with flat hands.
6:44 Stack and wrap in towel to keep them soft.

Couple days is best. Allow to come to room temperature before cooking.

Hi what heat temperature should pan be throughout cooking?
Initially heat the pan at medium high. Once you place the paratha on the pan , cook at medium heat. High heat will burn the surface, while leaving the center undercooked.
@@TheDeliciousCrescent Hi I ask because I don't have a medium heat setting as I use a cast iron pan so it can get very hot if I use the middle setting. Do you know a rough temperature the pan should be? 200 degrees C?
In the video I am using cast iron. It is probably 180 to 190 degrees C. I would test and adjust to get the results as detailed in the video.

What brand of atta durum whole wheat flour do you use?
I’ve used Swarna, Sujata etc. In this video I may have used Swarna sharbati atta.
Can you substitute oil with butter?
Traditionally ghee (like clarified butter) was used. So it’s ok to try that.
Can i make many of them and freeze them? If i really don't have time😢
Yes you can. First stack them with paper towels in between or wrap in kitchen towel while they cool down completely. Then pack into freezer safe bags, with freezer safe paper or parchment paper in between Parathas. Thaw and reheat in skillet.

Do you think it will taste weird if I use oat milk in replacement?
It depends on the taste of the milk. If it has a neutral taste it should be ok. Dairy milk makes the parathas soft. I haven’t tried it with oat milk.

Did you use hot milk ?
Not hot milk. Lukewarm is ok.

Is this same as chapati?
No this is paratha which is a layered flatbread. Chapathi is also made with the same whole wheat flour but it is not layered.

Doesn't look like whole wheat at all
That is durum whole wheat flour, also known as atta. It is 100 percent whole wheat. The appearance of regular whole wheat flour and durum whole wheat flour (atta) is different when looked at closely.
