It starts out relaxing. Nice and calming! Untill your brain tells you that you can smell it baking. And the fresh yeastiness of the dough. Yeah relaxing not so much then. So at 3am you are going to stare at the ceiling and listen to your stomach growl and keep the neighbors awake. Or you find yourself getting up and baking yourself and keeping the neighbors awake. I have a bread machine and I know how to use it! The neighbors hate me!

i have a problem with my dough divider. everytime i need to recheck each dough ball weight if its the correct weight. i don't know if the machine or me is the problem 😕

Venita, the main change I made was I replaced the electric oven and one of the gas convection ovens with a propane deck oven.

What is you basis white bread dough recipe? Any tips on yeast and flour type?
I use instant yeast and Gold Medal Harvest King flour for most of my baking.
