As illustrated in the video you can record videos in 4K resolution without have a 4K monitor. You can also use these emulators to test how the application you are creating will behave on a higher resolution monitor.
I use one of these for DisplayPort whenever I want to do screen capture as I can have a virtual display that the capture software can see, while the screen capture software is on an actual monitor that I can see. I then move my mouse to the virtual screen and monitor through the capture software. It helps a lot in terms of not having random stuff popping up on the screen I'm recording.
