well yes and no... you can get it sharp very easy BUT because of the "soft" steel used to make most butter knives you'll NEVER be able to get it sharper than a razor... it'll top off at 300-400 (which is still very sharp)

But since stiff does not mean tough , that peace of scalpel sharp plastic will be sharp for exactly as long as it took to sharpen it .And this butter knife , made out of grade A chinesium will be sharp for no more than a few cuts in meat

You can sharpen boiled rice to that level(im not joking these is an asian guy who made knife out of rice) But what makes a good blade is not the sharpness as any blade will eventually dull. Its the blades ability to hold its edge/sharpness for as long as possible.

Let me tell you the story of my Ecuador friend that was with me when a pack of hoodrats came to rob us, and he pulled out… wait for it… a teaspoon. He did convince them about using it to pop out their eye sockets. Was effective defensive counter measure. I’m still confused years later

It’s possible the sharpener works well but the knife is meant to slowly get lowered onto the wire on the tester. If you just push through the wire you’ll get a much better but also inaccurate reading.

The thing is, if you sharpen both sides of a blade to 15 degrees, the total cutting angle of the blade is both sides added together, so 30 degrees. If one side of the cutting edge is flat, with no angle, then the total cutting edge would just be 15 degrees. This makes it technically “sharper” but in a different way. Sorry I didn’t do a great job explaining it

Funny story told by my grandmother: My great grandfather worked with cattle and agriculture so he was a very simple man, one day he went to a food place (nothing fancy at all) and when he got one of those knives he complained because it was too dull so he took his file that always carries and sharpened the knife.

I used a file then followed with a run of the mill sharpening stone. My butter knives are sharp now. They cut steaks like butter.
