For the sambal kicap, even people from the other state felt weird when they ate it for the first time. But we johorean obsessed with it. We put sambal kicap almost on anything 🤣
The soy sauce is actually we call SAMBAL KICAP. Small chili or chili padi + garlic + limau kasturi+ sugar.. blend them together But usually in Johor.. we don’t like to waste food.. So we dip many food with the left over asam pedas.. masak lemak chili padi , sambal tumis… And you must know to dip the sweet food into the spicy sauce will bring the contras taste and yummy. Try it
Yes, that's right. Johor has the most unique food where they are not available in other states. Johoreans mostly eat their laksa with hands....maybe it's because there isn't much broth. Anyway, it's great that you guys also tried murtabak Singapura and pisang goreng with sambal kicap. Yeah sambal kicap is like THE dipping sauce for johor people. I dip everything in it. Steve is right sambal kicap usually sweet soy sauce, birds eye chilli , garlic and sugar.

See if you can find Singapore Laksa - if you can't find it here there's always Secret Recipe.. 🤣 If you pop over to Singapore be sure to visit Arab Street - that's where the three famous Singapore Murtabak restaurants are. As far as murtabak in Indonesia - the only one I tried was from a stall by the side of the road in Bandung - and I must say it wasn't great. First of all it was deep fried in oil - they use a shallow wok rather than a flat plate (I see this in Thailand, too, at the Ro Tee stalls). While it was cooking the cook was splashing hot oil on it, and when it was done he turned it on its side and a bunch of oil poured out. It was the oiliest food I'd ever eaten and it really did a job on my insides, I must say. That was the last time I tried murtabak in Indonesia. I noticed people frying murtabak the same way elsewhere - in Palembang and Jakarta. I remember seeing five or six murtabak floating in a pool of oil at one place. Something I found amusing - I was in Tawau (east coast of Sabah, near Semporna), and at the Pasar Malam someone was selling "Murtabak Jawa". But they weren't deep-frying it so it couldn't have been authentic. 😁

I love pisang kepuk as pisang goreng and eat with sambal kicap. The sambal kicap ingredients are garlic, chilli, soy sauce and sugar. Some would add lime juice a bit. I love a thicker version of the sauce by adding more garlic.
how i made sambal kicap 1. chillies (segenggam) 2. garlic (1 or 2) 3. sugar ( ikut tahap kepedasan yang kita nak) 4. soy sauce (kicap jalen) - blend all the ingredient together or tumbuk lagi sedap - usually homemade sambal kicap for pisang goreng will be more thick (pekat/likat) compare to the stall sambal kicap

Aaayyyyy... Bumbu Asli! I run pass this restaurant almost every other day on my early morning run! Another legend about the origins of Laksa Johor is that the Sultan Abu Bakar (great, great grandfather of the current Sultan) liked Spaghetti in Ragu (or marinara) sauce so much during his travels through Europe that he asked his cook to try and replicate the dish when he returned to Johor. The cook who only had local ingredients to work with came up with that fish sauce and paired it with spaghetti that the Royal entourage brought back with from their trip.
You should try Johor Tempe goreng with hot spicy black soya sauce pedas. Pisang Nangka goreng They put belacan paste plus chilli padi into the hot spicy soya sauce. Enjoy your meals. 😅
Murtabak, originally named Motabbaq (Arabic) means folded. But some says it came from the word Mutabar (a Kerala/Tamil word means egg roti) and brought to Yemen where it got its Arabic name. Could be tho, because the Indians are the ones who introduced this dish in this region. But, basically it is stuffed roti and normally stuffed with meat like beef or chicken and became a thicker version of roti.. Malaysian murtabak normally uses fresh meat, precooked in curry et cetera. Singaporean murtabak uses a lot of minced meat. Indonesian, Brunei, Thailand version are almost similar too with different twist of course. The one you had uses frozen minced meat & most likely fried, the reason why it taste drier instead of juicy. Not floss, not ground beef, not dry meat. The Murtabak Singapura is yummilicious! If U are in Singapore, U guys must try the Murtabak from Victory Restaurant near Arab Street. Next to Victory restaurant is Singapore Zam Zam Restaurant’s Murtabak. However, the best is stil the now defunct Queen Murtabak at Geylang Lorong 40.
It is not only a soya sauce, we Johorean call it Sambal Kicap. The basic/base sambal kicap ingredients [my family style not sure about others] Sweet soya sauce, cili padi, garlic, gula melaka, salt, tamarind and vinegar. The homecook sambal kicap will be thick without any water added. To eat with goreng pisang we add more sugar. To eat with ikan bakar or kerang with add lime juice and chop onion. Or we can just eat as it is. Johorean are obsessed with Sambal Kicap, as for my family we always keep a bottle in stock.
The longer one is Pisang Nangka and the short fat one is Pisang Kepok / Nipah / Abu. Both are plantain. Plantain is the kind of banana that need to be / normally cooked before consume. Verses banana like Pisang berangan, Restali, Pisang Emas that you can eat upon peeling. 😊
In 1974 I ate pisang goreng at the stall with chili sauce. Everybody laughed at me and called me crazy. The next day when I went to the same pisang goreng stall (in Cheras) I saw everybody eating it with chili sauce. Since then, almost everybody want to eat pisang goreng with all kind of sauce.
The fried banana Steve described from Brazil sounds like my late mom's recipe, she will fry the banana on its own without batter, and layer them with sprinkles of sugar, caramelizing the fried banana, yummy.
Only at Johor we eat Pisang goreng with sambal kicap...... in sambal kicap we add chilli, garlic and soya sauce (kicap manis) a bit of sugar would be nice too (pound it not blend)..... some places in Johor the dipping sauce using the same method but add some crush ground peanut to make it thicker sauce. So now you already know how to make sambal kicap for pisang goreng.... hahahha
The kicap dip is called sambal kicap. Its a combination of kicap + garlic + cili padi + asam jawa + sugar. Or some other combinations depending on the locality.
LOL I definitely prefer sweet pisang goreng, more like a dessert than a meal. (Brazil has the best ones). But, in the end we ate the whole plate. I wouldn't say it was bad, but it was confusing LOL
More fresh than fish... must be frish... anyway there is the story why the laksa Johor is using spaghetti... and the murtabak Singapore filling is made of spiced minced beef...
And Steve, your taste bud is amazing! There is garlic in the sambal kicap. The basics in Johor-styled sambal kicap: bird's eye chillies, garlic, soy sauce, and sugar. You can skip the tamarind sauce or lime juice, or gula melaka, but NOT garlic.
Apart from soy sauce i also like to dip with peanut sauce normally used with satay. Thicker version and spicier of this soy sauce is used in soto ayam. This is more diluted and less spicy for pisang goreng.

Even Malaysians who are non-Johoreans didn't expect Goreng Pisang to be so good with sambal kicap. If you mix pounded or blended chillies with soy sauce, plus some sugar, it automatically taste different. Just different. Some people add one or two of garlic, some don't. Some add one or two cloves (cengkih), some don't. Some add bawang goreng, some don't.
do you know that unripe Malaysian fruits such as the banana and papaya are also made as vegetable dishes to eat together with rice. We also use all sort of pickels from plums, lime kasturi, prunes, nutmeg etc to be cooked with chillie paste, as our side dishes which called as acar. We cook pineapples too with masak lemak and in kari (curry). We use manggo in our sambal belacan as to add sour flavour. That's the reason why it is possible to eat banana fritters with soy sambal,

The road called Kolam Air Street (translation) the actual land where the shop sit, was my neighbor house where his family selling roti canal & Nasi lemak since 80’s. Tq for sharing…this place holds so many happy childhood memories, I’ll truly miss it 😢. Alhamdulillah 🤲🏻 Now I’ve my own family marrying a New Zealander & my parents had passed away, so every time I go back Johor Bahru I will drive around to show my kids this place. ❤️
That goreng pisang place (MAWAR headquarters) is popular in JB, simply because it was the favourite of the previous Sultan, the late Sultan Iskandar. Whenever he wants Goreng Pisang, the guards would buy it from that place. However it's not the best place to get it in JB. Seriously.

Peoples from other states in malaysia always said johoreans like us are so weird. Eating banana fritters with sambal kicap. They normally dip the banana fritters with chilli sauce. But once they try the sambal kicap they love it.
We're the polar opposite man! The more fish I can smell in a dish, the more it make me drool! Even for freshwater fish, I don't mind the smell... Locals call it "hanyir" or "bau tanah", but all of that makes me want to eat it more
The one that you have, its not properly ripe. Pisang nangka should be very nice..mushy, sweet and sour. Its even better if pengat pisang or sira pisang.

Have you guys tried sweet chillies dipping sauce for pisang goreng. The locals in Terengganu like it that way.
The fried banana Steve described from Brazil sounds like my late mom's recipe, she will fry the banana on its own without batter, and layer them with sprinkles of sugar, caramelizing the fried banana, yummy.
Only at Johor we eat Pisang goreng with sambal kicap...... in sambal kicap we add chilli, garlic and soya sauce (kicap manis) a bit of sugar would be nice too (pound it not blend)..... some places in Johor the dipping sauce using the same method but add some crush ground peanut to make it thicker sauce. So now you already know how to make sambal kicap for pisang goreng.... hahahha
The soya sauce blended with garlic+cili padi....the sauce can be eaten with ikan bakar...fried taufu...and our local soup or soto...
That leaves in the laksa is Daun Kesum (Vietnamese Corriander).
And there's also Bunga Kantan (Ginger Flower)
Pisang Kepok/Nipah = Sweet
Pisang Nangka = Sweet and Soury

Tumbuk semua bahan di atas
Masukkan kicap manis.

The kicap dip is called sambal kicap. Its a combination of kicap + garlic + cili padi + asam jawa + sugar. Or some other combinations depending on the locality.
It’s so obvious that steve didnt like the fried banana dipped in the soy sauce. 😂 As a malaysian myself, i also prefer to eat fried banana on its own!
LOL I definitely prefer sweet pisang goreng, more like a dessert than a meal. (Brazil has the best ones). But, in the end we ate the whole plate. I wouldn't say it was bad, but it was confusing LOL
The reason the fried bananas weren't that great to Steve was probably because it wasn't the right banana. Maybe fried pisang abu would be tastier.
Pisang Abu/nipah/kepok adalah jenis pisang yang sama.
In Johor, normally we fry pisang nipah, cousin of pisang abu
More fresh than fish... must be frish... anyway there is the story why the laksa Johor is using spaghetti... and the murtabak Singapore filling is made of spiced minced beef...
And Steve, your taste bud is amazing! There is garlic in the sambal kicap.
The basics in Johor-styled sambal kicap: bird's eye chillies, garlic, soy sauce, and sugar. You can skip the tamarind sauce or lime juice, or gula melaka, but NOT garlic.

Apart from soy sauce i also like to dip with peanut sauce normally used with satay.
Thicker version and spicier of this soy sauce is used in soto ayam.
This is more diluted and less spicy for pisang goreng.
inside of sambal kicap u can find garlic, soy sauce and 🌶️ . thats all. easy to make. just make sure u cook a bit the chili to prevent tummy ache

Even Malaysians who are non-Johoreans didn't expect Goreng Pisang to be so good with sambal kicap.
If you mix pounded or blended chillies with soy sauce, plus some sugar, it automatically taste different. Just different. Some people add one or two of garlic, some don't. Some add one or two cloves (cengkih), some don't. Some add bawang goreng, some don't.
soy source, cili padi, garlic, sugar, salt..blend together.. and sometime they cook it..
Once you eat fried banana with sambal kicap, u will not came back, u will always want sambal kicap hahahaha

do you know that unripe Malaysian fruits such as the banana and papaya are also made as vegetable dishes to eat together with rice. We also use all sort of pickels from plums, lime kasturi, prunes, nutmeg etc to be cooked with chillie paste, as our side dishes which called as acar. We cook pineapples too with masak lemak and in kari (curry). We use manggo in our sambal belacan as to add sour flavour. That's the reason why it is possible to eat banana fritters with soy sambal,
Murtabak Kelantan taste 100 times better bro...and it only cost RM4 - RM5, full of meat & delicious spice taste...trust me 😁

Haha….now u goin to get troubled mate!😂 the tastes goin to haunt u once u leave Johor lol. Actually the murtabak place u eaten just now is where I was born 53 years old ago 😆. The road called Kolam Air Street (translation) the actual land where the shop sit, was my neighbor house where his family selling roti canal & Nasi lemak since 80’s. Tq for sharing…this place holds so many happy childhood memories, I’ll truly miss it 😢. Alhamdulillah 🤲🏻 Now I’ve my own family marrying a New Zealander & my parents had passed away, so every time I go back Johor Bahru I will drive around to show my kids this place. ❤️

That goreng pisang place (MAWAR headquarters) is popular in JB, simply because it was the favourite of the previous Sultan, the late Sultan Iskandar. Whenever he wants Goreng Pisang, the guards would buy it from that place.
However it's not the best place to get it in JB. Seriously.
eating fried dish wth spicy soy sauce in johor never get perfected until u both try with fried cempedak, sweet potato n the most delicious banana called horn banana..more bigger in size (shape look like horn) n more delicious..the fresh one seller always hang it up in front their stall

Peoples from other states in malaysia always said johoreans like us are so weird. Eating banana fritters with sambal kicap. They normally dip the banana fritters with chilli sauce. But once they try the sambal kicap they love it.
I think not all of the other states think that. I in Negeri Sembilan usually eat with that too. I don't know about other states though.

We're the polar opposite man! The more fish I can smell in a dish, the more it make me drool! Even for freshwater fish, I don't mind the smell... Locals call it "hanyir" or "bau tanah", but all of that makes me want to eat it more
The one that you have, its not properly ripe. Pisang nangka should be very nice..mushy, sweet and sour. Its even better if pengat pisang or sira pisang.
Johore makes the best laksa although I still prefer to eat it with laksa noodle
