Chef Deena, You are really devoted to your profession. I watch all your videos and take cues from your own suggestions and those of your co-contributors i.e. the not-so-known great cooks. I cook myself as I had lived in different parts of India and due to work schedules cooking was necessary and as a single father I cook for my two sons who are grown up and who help me. All the tips you had given are vital to the indigenous practices and I also want you to add a lot of traditional recipes like Amla (Nellikkai murapa) Kanda thippili rasam, etc and the list is almost endless. There are at least 4000 plus herbs in India and hardly any research is carried out on making or developing recipes. My favourite is orange rasam and bahala bath as I cannot stand curd rice. I also request you to add importance of safety in cooking like wearing apron, head scarf etc to save skin from oil spill etc accidentally. Also avoid plastics particularly when they come into contact with wet food items as the chemicals in plastic will leach over to food. Cooking in mud pots is an excellent idea as it is compatible with both gas and microwave and can create lot of employment.
Pl add special recipes for Navratri and Deepavali and Karthigai so that more people attempt their own recipe. I want you to add recipes using puffed rice aval which consumes less oil and Dhalia (broken wheat) which is an excellent base for making halwa and uppuma.

I see this problem everywhere in India. In other asian countries they are proud to run their ancestral business while our younger gen chase after IT dream.
