I am also on a elimination diet of sorts..no white anything, so I would like to make these with brown rice, but which kind of rice? There is sushi rice and sweet glutenous rice (not gluten as in wheat)
I didn't even know there was brown sushi rice, sorry. I honestly would just use whichever brown rice is cheapest.

It's definitely worth a try. I haven't tried, but I think it would work. The texture would likely be more dense so keep that in mind when making.
I might give theses a try :-)
