Updated Jollof Rice Recipe Served With Roast Lemon Chicken

This is an updated recipe guide from one I did previously and here I share more info and tips to get your Jollof Rice right on your first attempt especially if you are not from West Africa where the dish originates.
I have served it with Roast Chicken which I also demonstrate and I hope you enjoy yours.
Jollof Rice
Ingredients:
2 large onions
2 medium red peppers(for spicy version add chillis)
3 tomatoes
1-2 tbsp tomato paste
Garlic (optional)
250ml water/chicken stock
Suya spice(you can substitute with 1 tsp of ginger, garlic, paprika, cumin each)
3 cups rice
Rosemary-Lemon Roast Chicken
Ingredients:
1 whole chicken
1 large White Onion(sliced)
3-4 cloves garlic
1 Lemon(sliced thin)
For the Marinade:
Ingredients
1 cup oil
small bunch rosemary
2 tbs salt
2 Tbsp Black peppercorns

How many Kg of rice did you use?
I used about 3 cups rice
Chef that rice is too sticky for jollof. To get the perfect jollof, soak the rice for minimum 2hrs so when cooking you only use half the water then steam the rice by covering with a parchment paper and sufuria cover
