My daddy died a year ago Sept 11 2022 and he used to make Enfrijoladas and they were so yummy!! 😋 I miss him so much 😢 All the dinners looked so yummy!! All are some of my all-time faves!!💜🍴👍👍
So sorry for your loss. My Dad passed away Jan 2022. His favorite meal as a kid and adult was Carné Bif- canned corned beef warmed through with sofrito, served over rice with fries (or any potatoes of your choice like tater tots, hashbrowns). It is super yummy 😋 and is one of our staple meals and a favorite of my sons and I. Only takes about 30 minutes to make. It used to be a $5 meal but canned corned beef is high now. But I still make it because I keep rice stocked and if I have no sofrito I just make my own.
I'm a single lady 71 years young..going to make the turkey meatballs tomorrow w some pasta sauce..no bread. They should be divine! By the way I love your happy positive spirit ❤..and I love yiur boys..they are sweethearts

ooh another cheap meal is either ground beef or turkey w rice, 2 gravy packets (mixed separately as gravy) 1 small onion & 1 small pepper..mix together. of course adding spices to the meat to your liking..add gravy at the end..reminds me of pepper steak on a budget. delicious and inexpensive

Had no idea people in the south ate enfrijoladas!!! Thats how my mexican mom prepares them, except she uses homemade beans and homemade spicy salsa! One of my fav dishes❤
Made your Mexican enchiladas. I had 2 chicken breasts that needed to be cooked up, so I shredded and used in the tortillas w/the cheese. Used flour tortillas b/c that's what I had. Topped with salsa, sour cream & sliced green onions. DELICIOUS! New sub. Been binge watching your clever vids! Thanks!
That sounds good with the pureed black beans. You could also mix some black beans with the cheese and stuff the tortillas which would give them a little more substance too.
The bean type is regional southern Mexican states usually eat black beans northern states eat pinto... in sonora we traditional eat pinto beans but in Oaxaca is a guaranteed black bean.
In this video your hair is lighter and with curls....looks darling. Your meal plans have been so very helpful to me although I live alone....I just freeze the leftovers. I am diabetic but I try to keep my portions small to stay within the carbs that I can have. I freeze all my bread and buns because when you thaw it the carbs are 39 percent less so that works well with me. I’m not really a fun of ground turkey but been using it a couple times a week. I have found that by treating it like ground beef and seasoning it heavily helps. Worcestershire sauce and better than bullion beef base really makes the turkey taste “beefy”. This kids have adjusted pretty well and we save ground beef for bacon cheeseburger 🍔
What’s cool to me is how you bring forward other recipes than just beans and pasta. I appreciate that because there’s only so much beans and pasta you can eat 😂
Another main reason I love frugal meals is because they're quick to slap together and with a new job I've been so mentally and physically drained... Thanks for the solid inspiration. Also love the amount of meatballs you got out of just one pound of turkey!

I use the ground turkey roll like you bought for everything., They also make a italian seasoned roll and a breakfast sausage roll . I add beef bullion to the regular turkey roll and it works good. If i find ground beef on a real good sale, i buy it and do half ground beef half ground turkey. Saves me a lot. And the rolls are weighed out at 1pound and already frozen so they can go straight to freezer if your not ready to use them.
Great video. Next time when your budget is tight and you want garlic bread just buy hamburger or hot dog buns and use them and save yourself another dollar towards something else. I grew up on that type of garlic bread because there was 8 of us and mama never bought garlic bread.
I did too! Did you all use sliced bread for everything? We did lol hot dog buns and hamburger buns were for the rich neighborhoods 😂 we used loaf bread for it all. I tell you what some days I use loaf bread for hamburgers just because it brings back memories and tastes so good!

my daughter in law makes "taco balls", taco seasoning and she crushes doritos for bread crumbs, 2? wks ago the 9yo gdaughter made the taco balls and since she LIKEs them she made them 3x the size mom does so our taco ball subs turned into taco balls with sauce on the plate and garlic toast buns... I do the enfrijoladas using black beans, cheddar and pepper jack cheese but I also just make quesadas with black refried beans either way its super cheap and super easy
👍😊❣️ when I make tater tot casserole I usually add half a bag of frozen mixed vegetables or any kind of vegetables, to the meat mixture when it is cooking to get veggies in the meal. That would only add like 50 to 75 cents.
We make a bean burrito and make a side of pico and shredded lettuce kindi of like a Mexican plate at home we love refried beans so many ways to jazz them up. Definitely wanna try the pasta with the veggies those looked amazing and flavorful. Thanks for the inspiration.

Ive been binge watching your videos and writing down recipes. Yesterday i saw one with mississippi meatballs. Crockpot is loaded and ready to go in today!
I also use cream of celery for tater tot casserole. Only difference is I add green beans, and if I add cheese I put it between meat mixture and tots. 😁 But really you can’t go wrong with tater tot casserole.

First time I made this my family didn’t care for it (picky eaters grrrrr) so I tried again but added beef bouillon and a tsp of Worcestershire sauce to the ground turkey and they ate it up. Now my son asks for the “dynamite” casserole -TNT casserole ( turkey n tots) and he likes ground turkey in the homemade cheeseburger macaroni!
I was given a recipe for faux Alfredo sauce. It wasn’t the same as Alfredo but some of my family liked it more. 1 can cream of mushroom soup. 1 can whole milk. 1 T Parmesan cheese (the cheap stuff in plastic). Salt & pepper to taste. I also add garlic & other spices depending on my mood. It’s very good with chicken & broccoli.

I have been spoiled by the meatballs from Sam's club. They are 6 lbs for around $13. It's a great price and I can fancy them up with my sauces and spices. Love me the meatballs with the grape jelly and chili sauce. It's just the hubby and I now, so the food goes so much farther now. I still haven't learned to cook for two since the kids have grown up!

So the last dish you made I would call enfrijoladas. It's basically an enchilada in a bean sauce. There is a wonderful woman I follow, Angelica Faz Jung, her channel is Simply Mama Cooks, she is Mexican American and lives in the Houston area and she shows budget meals she grew up with and how her family taught her. Like your channel, it's budget and delicious! You'll have to check out her pan tacos where she starts with raw seasoned beef and then cooks it inside with the corn tortilla like a tacos dorado. I thought that was a fantastic idea and saves on time and clean up of yet another dirty dish. You have some tasty looking meals here and I am definitely going to be making some of them at our house. I love that you used hot dog buns for the meatball subs. At my Kroger store it was way cheaper to get hot dog buns instead of hoagie rolls.

You should always use a little pasta water anyway - the starchiness thickens your sauces and helps it stick better to the pasta. Yum!

To stretch Alfredo you can make a white gravy flour butter or oil with garlic seasonings and parm cheese.
When I was a young wife/mom I would use a drop of oil to heat up each tortilla. It must have been the way to do it back then, almost fifty years ago.

You might also like heuvos ranchers. I use corn tortillas with refried beans and cheese topped with a fried egg

My family actually prefers leftover buns as garlic toast😆. And, yes, we used bread growing up as buns. Still do in a pinch….who cares!
You can also sometimes a cheap loaf of plain French bread Slice it up and make garlic bread with it

You need the oil sp the tortilla wont break and for flavor we do this too for enchiladas well that's how I was thought lol 🤷♀️🤷♀️

I love that you’re real with the purchases. Yes, people have basics like salt, pepper, seasonings, oil, flour etc. It makes this more interesting when you can buy more out of ordinary ingredients to whoop something up!!! 😊😅
I have been spoiled by the meatballs from Sam's club. They are 6 lbs for around $13. It's a great price and I can fancy them up with my sauces and spices. Love me the meatballs with the grape jelly and chili sauce. It's just the hubby and I now, so the food goes so much farther now. I still haven't learned to cook for two since the kids have grown up!

So the last dish you made I would call enfrijoladas. It's basically an enchilada in a bean sauce. There is a wonderful woman I follow, Angelica Faz Jung, her channel is Simply Mama Cooks, she is Mexican American and lives in the Houston area and she shows budget meals she grew up with and how her family taught her. Like your channel, it's budget and delicious! You'll have to check out her pan tacos where she starts with raw seasoned beef and then cooks it inside with the corn tortilla like a tacos dorado. I thought that was a fantastic idea and saves on time and clean up of yet another dirty dish. You have some tasty looking meals here and I am definitely going to be making some of them at our house. Thank you!

Never had the last dish you made but it looks delicious you should try whisked eggs with shredded corn tortillas a little salsa and some cheese in a casserole dish until the eggs are set bet your family would like that as well

Your last dish is pronounced en-FREE-ho-LAH-dahs. It's like enchiladas, but instead of covering the rolled tortillas with chili sauce, you've covered it with bean sauce. Looks yummy to me, girl!
