I love a Basque Cheesecake and adding corn is such a great idea! In fact I love every addition, lemon zest, corn starch vs flour, the brûlée top, and sprinkle of flakey salt. Can't wait to try this. We go to Puerto Vallarta each year for Bear Week and stay at an amazing condo with a chef included. I love love flan and one of the chefs blended corn into one, it added a such a great sweet rich taste.
Cesar, I am so glad to see you cooking the corn cobs! I do that too and then I cook it down until it's almost a corn demi glace. LOL and freeze it. In the winter when I cook polenta and there's no fresh corn to be found, I add that to the polenta and it is so good!

I tried this and the top did not come out blackened but the internal temp reached above 180! what did I do wrong? was this supposed to be on broil for part of the cooking process (or even convection bake?) because i had it on a traditional bake where the heat only comes from the bottom.
I appreciate the recommendation on the temp. So many channels don't include tips like that. And they are very, very useful tips.

Basque cheesecake is the best form of cheesecake. Back from San Sebastian this summer and they have ruined all other cheesecakes for me.
