    for your egg whites, There's a Portuguese dessert called Molotov. its basically an egg white cake/pudding deal. 1.5-2 TBS of sugar per egg white. beat until it soft peak and bake it in an angle food cake pan in a Bain Marie. I usually also add caramel to the pan like you would for a flan.

    If making a custard or pastry cream with cornstarch, please make sure to cook it till it visibly boils/bubbles, not just thickened, to make sure the starch is activated, else you might end up with runny custard after cooling (even if it looks super thick when you take it off the heat!)

      If it boils, then you're more likely to end up with a curdled custard!

    I usually stay far away from dairy and eggs, but WoW this cake seems irresistible! Beautiful and absolutely special, show stopper. Must try ❤ Great job 🎉

    Oh, love the idea of using pastry cream to stabilize the whipped cream.
    Kind of wish they showed a diagram of what they meant by allowing the cake to cool upside down?

      It works really well! And yes shoot we definitely should've included that. Basically you'd just flip it upside down onto a plate/baking rack and immediately remove the cake pan so it doesn't weigh it down. Then let it cool fully!

    A great presentation by a lovely young woman with great baking skills. Thank you for demonstrating it. I was wondering why you left stems on the strawberries but you explained at the end. Just my opinion, but I think it would be better to remove them. You already have color by adding mint leaves which are edible and refreshing. When a guest bites into the beautiful fruit topping, it would be awkward for them to encounter berries with stems. Either they have to take their fork and remove the stem before eating it or they accidentally get it in their mouth and have to spit it out. It just takes away from the experience of eating that heavenly cake.

      Thank you!! I totally hear you, I just thought it looked pretty/looks pretty when others do it, but it's completely up to whoever's making it. And yes like you said, since there's mint on there too you'd still get green without the stems!
