The Midi shield I used with the Mega: a.co/d/7blwIIC
The Dupont connector kit I used: a.co/d/4kNb9Wv
If the Dupont connector kit is not available, just search for "Dupont connector kit" and make sure that it has both male and female pins as well as connectors of various sizes.
After I shot the video, I discovered that you can buy pre-made Dupont cables from AliExpress, which is a big time saver. Search for "dupont male to female cable 6p". Make sure that you buy a cable that has plastic connectors on the ends instead of a cable that just has individual separated wires on the ends - the plastic connector is essential for helping the cable to stay reliably plugged into the Arduino.

Pretty thorough. I was very fortunate not to have to deal with a matrix when converting my Thomas pedalboard to MIDI. The Teensy 4.1 is really nice for this particular type of project. I should make a video documenting it as well!

I don't know. I've always used midi keyboards, so I've not researched what is involved in keyboard midi conversions.
