I am a former chimney sweep. Out of all the calls we got to inspect water leaks in masonry chimneys I would estimate that more than 85% were due to the lack of a cricket.

You just need to elvate the mid section a bit to prevent the water to "sit", why would anyone build a whole seperate little roof behind a chimney to avoid that? Your "leveling" the top of your "cricket" just lower that to the point that the water cant "sit" and your good and the customer doesnt ask "what ugly abomination did you put behind my chimney".
Major bs. All you need is a correctly installed saddle flashing. Most roofing contractors don't know how to do it.
