However, even though I followed the instructions and the camera is balanced when I walk around and turn a corner for instance the camera stays turned in the direction I was turning. So now I can't see the screen as the camera is pointing at the 9-10 o'clock position. What am I doing wrong?!!!

It’s recommended to choose the focal length your going to use and zoom to that then start balancing. I did balance my 35-150mm at the 35mm and while the gimbal was on i zoomed all the way to 150mm, gimbal was working fine but the tilt motors were working extra hard.
If you have the gimbal off and the camera is balanced then when you move the gimbal around the camera should be stay relatively still. If its not still then your not completely balanced, if it is still then try calibrating again. The rs3 mini should be able to handle it.
No matter what I do, I can never get my Nikon Z30 to stay still in any position which (from many tutorials) is telling me that my balance is off. It always tilts. Every time I do a balance test as well, it tells me I need to do all 3 sections again. I bought this last week and I still haven't managed to get a perfect balance yet. I feel hopeless at this point. It shouldn't be this difficult.
It may take some practice really, technically you dont have to have it perfect. Are using any heavy lens or attaching things on your cold shoe/camera that can make it difficult to balance? The more addons you have on the camera the harder it will be to balance or unable to balance without counterweights. If your just balancing camera and lens only make sure your camera is ready to shoot with the lens cap off your preferred focal length and monitor where you want then start balancing. Really just keep practicing with micro adjustments. was hard for me to at first. If your close to a good balance just start calibrating and you should be good to go the motors will just work slightly harder. Good luck!
im glad you like the video, yeah i can make video trying to help you get your a7iii working with your gimbal, its morning time where im at so i can probably post it later in about 8 hours or so. but let me try to help you in the comments. for the usb-c cable to work: on the sony a7iii go to menu and scroll over to the setups tab page 4/7. find where it says USB Connection and make sure it is set to PC Remote. then plug in the usbc cable to your sony a7iii and plug in usbc to the gimbal where the port says RSS with a camera symbol on it. for the cable to work and be connected make sure the gimbal is not in sleep mode. Bluetooth mode: if your not connecting i suggest going to your menu on the camera to Network 1 page 2/3 and select Reset Network Set. , your camera will reboot, then go back to network settings then bluetooth settings, set bluetooth function to on. then after that go to your gimbal swipe down from the top select bluetooth find your camera and select it. then on sony a7iii select pairing mode and pair with the dji rs3 mini. after it is paired. go to network settings page again go to page 3/3 and turn on bluetooth Rmt CTrl to on. then you should be able to control your camera with bluetooth on your gimbal. ill post a video shortly showing you how. :D

hello would you recommend this gimbal for my Sony a7iii with a 24-105 lens
All depends on what you like 24-105 lens should work no problem. I like the mini because how small and portable it is.
That grinding sound between 80-100% is that normal? Happens to me too. I thought something was wrong with the motor

I can’t see, to balance the 16-35mm on my Sony a7iii. It works but I feel like the motors are going to die

I think you made a mistake, it seems you are conflating roll and pan at least in the chapter description.
I didn’t really see too much wrong with the chapters but i adjusted some and added a new chapter, let me know if that did the trick. 😊
