what should I expect if I don't use gelatin?
It will taste better. Real cheesecakes don't use gelatin don't know why she did. When the chocolate cools it works as a setting agent. Trust me it will come out creamier and still set. I hate it when people put gelatine in cheesecake they always have that slight jelly taste and consistency which is vile. My friend is a chef and its a no to gelatine. Soon as she put that crap in she ruined it.
