  • In this video we make a chocolate sandwich cookie ( aka Oreo) cake with cookies and cream icing and chocolate ganache. The base cake follows Buddy Valastro's (aka The Cake Boss) recipe. All recipes are listed below.

    Chocolate Ganache
    ½ cup heavy cream
    ½ cup salted butter
    1 ½ cups dark chocolate morsels
    Melt all ingredients together in a double boiler. Alternatively melt in microwave using 30 second cycles. Once melted stir all ingredients together very well. For cake layer filling allow ganache to set up to the consistency of creamy peanut butter. Chill if needed to promote setup. To drizzle on top and sides of cake allow ganache to cool completely and test for proper consistency before placing on cake.

    Cookies and Cream Icing
    2 sticks (1 cup) unsalted butter at room temperature
    1 tsp vanilla extract
    2 cups powdered sugar
    1 cup finely blended chocolate sandwich cookies
    In a mixer combine butter, vanilla extract and half of the sugar. Mix until blended while using a spatula to keep sides of bowl clean. Finish adding sugar and mix well. Add blended cookies and complete mixing.

    Chocolate Cake (follows Cake Boss recipe)
    1 ½ cups flour
    1 ½ cups sugar
    ½ cup unsalted butter (I prefer a full cup)
    1/3 cup cocoa powder
    1 tsp baking soda
    ¼ tsp baking powder
    1/3 cup unsweetened melted baker’s chocolate
    2 extra large eggs
    ½ cup hot water
    ½ cup buttermilk
    - Preheat oven to 350 degrees
    - Prepare two 9 inch pans (2 inches high) with butter followed by dusting with flour
    - Mix dry ingredients and butter in mixing bowl until blended. Increase speed and mix for 1 minute. Add melted chocolate and mix for 1 minute. Add hot water while mixing. Add eggs one at a time being sure to blend well between eggs.
    - Before baking be sure batter is between 70 and 73 degrees to avoid a crown. Divide batter between baking pans. Bake for approx. 25-30 minutes or until a toothpick placed in center of cake comes out clean. Cool on wire racks fully before icing.
