2 tsp dhaniya ke beej
1 tsp saunf
½ tsp jeera
⅛ tsp hing
1 tsp kasoori methi
3 tsp red chilli powder
¼ tsp black salt
⅛ tsp garam masala
1 tsp amchur
¼ tsp kali mirch
½ cup besan
2 tbsp moong dal
1 hari mirch
½ inch adrak
4 tbsp tel
Salt 1 tsp
Maida 375 gms
1 ½ tsp salt
3 tbsp ghee
Water - dough ke lie

Hi, I tried kachori for the first time and it turned out delicious.
Just have one small question, the day I made them they were very crispy and puffy but when I kept them overnight they became soft. What could be the reason? Is there a way they can stay puffy an crispy the next day as well.
The taste was still delicious the next day 😁
heat them in oven they will become crispy again
Add some Sooji in the dough and add little water in dal mixture instead use oil...
and after you make it make sure to place them in flat plate or something like this and when it cool down store it on Air Tight container.
