New here so sorry if this question has been asked before, but how do you make or where could one buy the jig you used to roughly sharpen the knife on the belt sander? Seen it used in a number of knife making videos and it doesn't look like something that would be hard to make! Thanks in advanced
I am making my son a meat carving knife much like a long sushi knife for Christmas. I very much like this shape of knife you made. May I use this idea for his knife? I also will make a chefs knife and a carving fork as a set and put them in a box as a set for him and his girlfriend.
What kind of steel do you use? It seems to be some sort of stainless steel but from my point of view it’s not the proper way to heat treat this material, right? Besides of that: amazing piece!

440 C Stainless steel...The quenching is maintained at 1000 degrees for 10 minutes...
