    I made Pasteles for years with my grandmother... She passed away a few years ago. Before she passed I recorded her preparing and making the Pasteles. My mom and I cried the entire time we watched her video... BUT our Pasteles came out AMAZING!!! Great idea to you tube this recipe. Great Job!!!

    This is the first video I come across, where the chef actually shows step by step how to make pasteles and in a variety, which is wonderful. I used to buy them already done but now I'm going to do them myself. Thank you Chef Julio.

    Thanks the raisins, olives and chilies in the pasteles, a lot of people don't like that combo, I love it. Ok so now I have to make for my family and all us transplanted New Yorkers.🤗🤗🤗😋😋😋

    Yes! The Carnation Milk is Old School from back in P.R. a lot of so called Pastele makers dont use it....But, they have no idea the difference they make in texture to the Masa! I loved your Video...Thanks much for sharing the true Boriqua Pastele secret💗🎵🎶🌴

    my mother (God bless her soul,though she passed away in 03) used to make these alot. If only I could've learned to make it the way she did.

    Best video I've seen so far and just what I wanted, to share with my non Hispanic friends. The vegetarian pastel for that special friend who doesn't like or can't or chooses not to eat meat is a great idea I had never thought about. Yes Julio you still got it Brother. Thank you very much.

    Chef Julio,
    Today after so many years that we've stopped making pasteles, my wife and I tried your recipe. May God bless you for sharing it with the world. I have not have pasteles this good in years. Me and the wife had this urge to make our own for this holiday season. Although her and I come from families who had their recipes, it had been many years since we've made them. So we climb unto the You Tube bandwagon, and there it was, 'Chef Julio's making pasteles video'. We followed it to the strictest procedure, ingredient, and condiment until like magic, presto, the best pasteles we've ever had in my life. There was one thing that I didn't quite get, how much achiote to put in to make it the right color. I guess that comes in with many more tries. Again me and the wife thank you, may God bless you with many more years. I love the part of the video when you said, "I still got it", indeed you do.

    I am so freaking hungry now! No wonder they taste so good there such a labor-intensive dish. I'm tired of complaining about no pasteles. This video will help. I will become self sufficient!

    I don't add condense milk to mine there are other way to do the masa smooth, many people can't tolerated milk and tend to have a heavy digestion because of it, I was born a race on the Island my recipe has 100 year comes form my great great grandma, totally authentic. Chef Julio has a great diversion of it love the clean way he works and how he detail it in to the process of making it.

    This is how my mom made pasteles de masa. It is authentic! Over the years people have made various changes to the real recipes with shortcuts and ingredients on hand. So I enjoyed the video and appreciate the time involved in making this delicious creation. Great job on the video! Congratulations Chef Julio!

    Just like a real Puerto Rican everytime I see this reminds me of Christmas feel the tradition me I was born in Puerto Rico and when I see this on youtube I thank you sir you keeping a traditional like my father does everytime then we get closer to Christmas it's time to make pasteles please let me know if you have a restaurant I will gladly go through it

    After watching this video five years ago, I been using your technique and never fails. Best pasteles ever! I just wilt n clean my leaves on the stove top and use my masa/pasteles machine to grind my masa and they are perfection! I Also make them of yuca or arroz. Thanks again for the awesome vid! 👍🏻

    Muy bueno su video Julio!..
    Here is my TIP for the Yucca Dough:
    I buy frozen grated yucca, but I add aprox 1.5 cup of hot salty water to a 3lb bag of the grated yucca and stir it, then pour two or three full large cooking spoons of the grated yucca in a cheese cloth, fold it and squeeze it to drip out the liquid and by doing so that way, I remove a "White milky Liquid" (or starch). Then unfold the cheese cloth and drop the dry yucca in a bowl and continue until depleted. At the end of the process, I end up removing more that 2.5 cups of the "White Liquid", meaning the grated yucca came with 1+ cup or more of water added. Thus, to make it malleable again, I replace the excess water removed with the same amount of "Seasoned Chicken Stock" where you boiled your chicken for taste and add annatto oil for coloring and thereafter ,continue the rest of your video recipe process. Thank you for sharing it.

    Master Chef Senior Julio.... I have wanted to make pasteles myself for so long since my grandmother could no longer carry on due to her age.     The best detailed video . This recipe is as delicious as it looks. I did it last year for the Christmas holiday and ran out immediately. My mom used to make them with just green bananas, potatoes and maybe plantain. They were delicious, but these are even better, "Sorry Mom." Adding all the extra vegetables really pumped up the taste of the masa and the milk help keep the soft. The only thing I did different was preparing and cooking the meat, but I'm almost sure he's way is also tasty. So for you first timers or those who want to try a different way of making them (like myself) go for it. You won't be disappointed. Thanks, Chef, for sharing this wonderful and informative video.

      It's not the same, rallado, w/ the grater (the way Chef Julio did ) is more chunky, has more texture, I find.

      Yes, rallado is BEST. However some people like to use blender or food processor for convenience and that's ok for them or selling in bulk but is 100% better when is grated by hand. I could be blind folded and still be able to tell which method was used for grating the masa, lol
      They also sell special machines created just for grating vegs in bulk with perfect result but they are very pricey.

    Very well done video. I've never made the masa with canned milk. I will be giving it a try. I do the cuban, puerto rican mix with my foods..(laughing) and a little soul mix. As long as I get the flavor I want..thank you so much.I will be checking for more videos.

    This is by far the best video I've seen in making pasteles. I have seen over a dozen video's on how to make pasteles and yours is the best. I have to say you are the only one of all the videos I have seen that go step by step on how to make them. My youngest daughter is going to be very happy this year because she is a vegetarian. This year she will be able to eat pasteles. I finally learned how to make pasteles. Thank you Chef Julio.

    It was a delight watching this video. brought sooo many memories. i bet they are delicious since its just like my family used to make them. I'm making pateles for the first time all by myself to keep alive the tradition and that's is going to be my Christmas present for my friends.
