I miss this show, I used to watch with my mom on PBS and then Daisy had a show on for a brief time when the Food Network started up. My mom always liked her b/c she made her proud to be Puerto Rican as so many images of the time when she was growing up and myself was either gang members, or drunks or household employees that didn't really get much screen time or respect when they were on the screen. There are so many great representations of Puerto Rican and other Latinae culture these days but Daisy was a trailblazer in her own little way back in the 90's.
I've been watching all the Pasteles recipes on youtube and this is the one that is closest to what I remember my mother making. I want to try making them but I haven't had enough courage! LOL
All the from New Orleans and I had the opportunity to try them I love them and going on 3 years making them now along with a drink called coquito yum yum yum thanks to my Puerto Rican friends for teaching me their cultural cuisines much respect and love 💖 💋 💖 💋 💖 💋
I always enjoyed watching Daisy cook. As a huge family, mami taught us early on the making process of the delicious pasteles. We never used cornmeal and yes, for most, it’s done during the holidays. For us, it was a way to make ends meet as a large family. In an assembly line fashion we would assemble the pasteles and although wrapped individually, we would tie two together for a llunta. With that same masa and pernil, mami also made alcapurrias. Those were great memories and very delicious recipes.

I discovered your channel, I asked myself where have you been. Love your channel, I also am Puerto Rican, and when you added milk to the masa. I said to myself she knows what she is doing. My mother was an excellent cook. And she alway added milk to the masa. I have yet to find a video where they add it so the masa is soft. Thank you for your beautiful aura.
+Cynthia Andrade I tried making arroz con gandules several times now. I still can't get it to taste like my mom's. I made it yesterday and it was my best so far. My sister makes it perfectly.
Cynthia Andrade Too much water. I've done that too. Pour enough water just to cover the rice. Put your pinky finger in and just touch the rice. The water should just come up to your first knuckle. Cook on medium heat just until the water is almost absorbed stirring one or twice. lower heat a little, Cover and (do not touch it) for 20 min. Stir, cover again continue cooking for another 15 or 20 min on low heat. That's what I've been doing to get the right consistency. It's all trial and error good luck. Practice by making a little white rice till you get the timing right.

Definitely everyone has their own version of pasteles but this is the first time I’ve seen them with hot peppers 🌶 … and I’m 62 y/o!! By the way, the procedure is the real way of making them … a lot of work but they taste the best!! 😋

I miss this Daisy!! This is definitely the sweet old Daisy Martinez that I know and love!!!! Happy, bright, motherly, and family loving. It breaks my heart what happened to her recently and I don't even want to think about it or talk about it. It's too painful to do so. I miss Daisy Cooks, I used to watch Daisy Cooks on Create channel aaaalllll the time whenever it was on. It is so fun to watch-it's one of my favorite cooking shows. I know she had other cooking shows after this but they were never as good as Daisy Cooks. I love the "Ola!!!" in the beginning!!! :) She's so happy and cheerful!!! They better put out a DVD series of this show soon!!!!

I loved and miss your show you always had wonderful recipes, but there is one recipe for a mexican flan made with media crema that you made and you mentioned that you got the recipe from a mexican woman outside of your church. I've made it a few times and it was always a hit but im not exactly sure of all the ingredients. The masa differs from house hold to house hold. But the meat should be a typical guisado where it is mixed with the sofrito (Wich already has cilantro), achote oil, that extra cilantro (if you wish) and salt/pepper. Add a little water, not as much as Daisy used though, but just enough to cover meat. Let that boil on high heat then turn down heat and simmer for as long as it takes for the meat to be tender. This method doesn't water down any of the flavors and when done, you don't have to discard excess liquid because you're able to use the delicious drippings with the meat to fill the masa.
syl-p Its’ supposed to be soft yet hold its shape when you unwrap it after boiling it. if its too hard thats not good. how was yours? was the flavor good?

I don't recall a pickled jalepeños recipe in her show. but perhaps it was the spicy pineapple vinagre? that recipe has peppers in it. google it and see if that's the one you are thinking of. there is a recipe page on the food network for Daisy.

The masa differs from house hold to house hold. But the meat should be a typical guisado where it is mixed with the sofrito (Wich already has cilantro), achote oil, that extra cilantro (if you wish) and salt/pepper. Add a little water, not as much as Daisy used though, but just enough to cover meat. Let that boil on high heat then turn down heat and simmer for as long as it takes for the meat to be tender. This method doesn't water down any of the flavors and when done, you don't have to discard excess liquid because you're able to use the delicious drippings with the meat to fill the masa.

I don't recall a pickled jalepeños recipe in her show. but perhaps it was the spicy pineapple vinagre? that recipe has peppers in it. google it and see if that's the one you are thinking of. there is a recipe page on the food network for Daisy.
