    Great video, excellent lighting and camera work...love the split screen! I hate small knives and skinny filet knives on an angle guide/1x30 (edge leading)...small room for error when you are on the corner of that angle guide. I usually go to a different sharpening method for those, but that's just me. Excellent work, Paul.

    Great video, excellent job making sure the camera is in a good position to show exactly what your trying to explain. I was sharpening a really dull steak knife on my 1x30 with the angle guide, blade width near the handle was only a little wider than 1/2", much thinner near the tip of course. The knife slipped past the top of the angle guide, cubitron belt dragged it down to the lower pulley and chewed it up in a second. Have to buy the customer a new knife now. Wish I had seen this video before.

      Have you made the mods to the angle guild I have shown? Getting the guild super close to the belt also stops that from happening. Try and get it practically touching without actually touching the belt. Doing that along with the one finger hold and angle turn I show in this video and you can do crazy thin knives without slipping in. Also we can kind of get in a zone sharpening when we have a lot to do but when doing those thin small knives is the time to really pay attention to technique and what we are doing.

    I tried but edge leading and edge trailing…and my technique still needs a lot of work. I think the problem with belt grabbing knife is compounded when using a stock motor speed. I liked edge trailing more because I had some better success but I always felt I was pushing the knife up too far and if I wasn’t careful it would grab it and make a mess. I created a 3d print to go with the edge guide (as opposed to cutting up the one I bought just yet)…which I think has potential (on Thingiverse) for those interested. Your videos always give inspiration…just not sure if I should spend the additional money and get a dc motor.

    How long are you typically working on a customer knife for sharpening? Cause in one of your other videos I heard you charge 10 dollar for one knife and that sound very reasonable.

    • @ALXSHARPEN
      @ALXSHARPEN  Год назад

      You can see my pricing at alxsharpen.come yes I charge $10 for Western blades $12 for Japanese work time varies on the knife’s condition and what it needs in general 7-15 min I would say is probably the average

    I really enjoy your videos, thank you for sharing your knowledge. Could you clarify what you were saying about honing compounds on the leather wheel? Are you saying that you usually don’t use any? Also, what speed is okay for the leather wheel? I have an 8in grinder, but it is fixed speed. Don’t know if that would be too fast.
    Thanks

    • @ALXSHARPEN
      @ALXSHARPEN  Год назад

      so what I don't like on leather is you will see some people use polishing compounds usually the green aluminum oxide bars or white bars. I do not like them. The get dirty and leave black marks that can be difficult to get off the knife especially the green bars the white is usually more dry but makes a mess. I would rather use a bare stropp than one with those products on them. For belts or wheels I like Tormek paste ,or making my own diamond spray by mixing 4-5 oz of alcohol and lapestry diamonds works great I like 3 micron diamonds the best.. my grinder is variable speed and I do use it at the low end the majority of the time. A regular grinder at 3500 rpm is to fast in my opinion the faster you go the harder the leather wheel gets so can be helpful to speed it up on difficult burrs.

    Hi Paul have been watching you for awhile now. Would you be interested in demoing how to sharpen knives with alot of flex? For example; a fish fillet knife is hard to do properly on the ken onion or precision adjust due to the flex on the tip. And sometimes I find I'm messing up that nice looking factory edge/tip. Thanks in advance if you do

    • @ALXSHARPEN
      @ALXSHARPEN  Год назад

      So for me I would probably do it on my Tormek T8 with the long knife jig to stop the flex that's not a great solution if you don't own a T8 . If I was doing it on a 1x30 I would use similar hand placement as the small knife I show at the end of this video to make sure the part hitting the belt stayed even against the belt. On a K/O that would be difficult to do.
