These fish have several names, including: Dolphin, Dolphinfish, Mahi, Mahi-Mahi, and or Dorado. It all depends on the region and area you catch them. In South Florida, we call them dolphin.

To all the people in the comments confused, a mahi mahi’s actual name is the common dolphinfish 😂 “mahi mahi” is the Hawaiian name for a dolphinfish, and in Spanish they call those fish “dorado”. Restaurants always put it on the menu as mahi-mahi so you don’t think you’re eating a mammal dolphin haha plus it sounds cooler. But When fishermen say “dolphin”, we mean mahi-mahi. We don’t catch flipper lol the mammal dolphins are too smart to be caught with a lure. But I get the confusion...when I was 6 my dad told me we were going deep sea fishing for dolphin and I was devastated 😂

If you’re going to fillet the fish on the boat, keep the carcass (with the head & tail still intact) after you’re done. Most states require this, so the fish can be measured. Even if the fish doesn’t have a size limit, but it’s still a regulated species, most states require the carcass to remain intact while fishing, or on the boat. Learned that lesson the hard way.

@@backflipsaresweet lol, you remove the guts. I make "fish head" soup. You blanch the fish head/bones, and discard the water. Then do a quick boil, remove bits of meat, set aside. Then boil the bones with mirin, soy sauce, garlic, ginger, and Korean pepper flakes. Makes a tasty broth. Then add in udon noodles (or noodles of your choice) and boil in the broth, add veggies, add meat removed earlier. It's one of my kid's favorites.

I remember seeing dolphin on the menu at several seafood restaurants in Florida and thinking “Wtf who eats dolphin and how is this legal?!” but I get it now lol

The first time I saw a fisherman with this fish and said that it was a dolphin fish, young me gave the experienced fisherman a lecture and told him that this was not a dolphin and that dolphins were not fish. How surprised I was when I found out later from other sources that this fish was indeed called dolphin fish.
