I tried it and it was amazing! Easier and faster than other recipes. I didn’t have a wooden mould but I isolated my pan with some cardboard wrapped with alluminum foil. The only thing didn’t work for me was resting the cake upside down on baking paper. Even with a thick oil coating, the top of the cake got STUCK to the baking paper. So I had to peel the beautiful brown top.

Wow! Really delicious recipe. Honey can bring so much difference in taste. I strongly feel it has to be pure for good taste and health. I have been using Trueney honey in my smoothies and health drinks. I was surprised to see 11 varieties, each one is unique.
I made my first ever Castella cake today!! I think I’ve got a lot to improve on yet haha (mine deflated a little when I put the honey syrup on nooooooo 😭) but oh man such a great cake, it’s gonna go into my repertoire of cakes I will make habitually for brunches and teatime visits! So light compared to American pound cake! I will perfect it one day!! 🙌🏼

Basically the heat almost only come from the top and bottom, which cause a very flat cake and the side are not more cooked than the middle. When you bake a cake without baking strips, there is always this doming effect (like a Madeleine if you wish), because the batter cook first on the side, pushing more batter in the middle, causing the middle to rise and be more moist while the side gets brown (see you Lemon & Blueberry Sponge Cake Recipe for example, where the sides are brown). And here there was some of this effect on the cake for sure, but not much. The sides are not dried out overbaked or brown. If you look attentively, the loaf pan has no bottom here, the bottom of the cake is directly on the cookie tray, and the top is exposed to the hot air, so that is the 2 parts that got brown. So what you can do, if you don't find this bread loaf pan, is to use one or more wet and cold baking strips around a loaf or cake pan. It's also effective for any other cake, so you don't have to cut the top of your cake to flatten it out. That being said, again if I look at your Lemon & Blueberry Sponge Cake Recipe, the cake seems to have got out of the pan flat, so it really depends on the cake and oven too, or so I think.
It looks delicious but you have not used baking powder so still will it be fluffy? Cake mix has baking powder in that. Please explain. Can we use self raising flour? Thank you.

I tried with handheld mixer, I failed twice......boohoo So I used my Kitchenaid mixer and it came out much better. Since I didn't have a wooden mold, I used bread pan and I doubled the ingredients. When I used cane sugar, egg white depleted so I used the powder sugar. I hope this help someone to make an wonderful Castella Cake. To Mommy Oven, Thank you for video. Ingredients • 8 eggs (about 120g in weight including shell) + 2 cups Power Sugar • 200 g sugar Milk 120g + Honey 80g + Cooking Oil 60g (no olive oil) • 220g all-purpose flour (or cake flour) 1. Preheat oven to 310 F 2. Cut wax paper to cover all 4 sides and bottom of the pan. 3. Cover outside of pan with foil to not get the thick brown layer. 4. Put 120g milk, 80g Honey, 60g Oil in the small bowl and heat in the microwave oven for 60 second. Leave it aside to cool 5. Separate 4 eggs into white in large bowl and yolk in small bowl. 6. Beat 4 egg whites in high speed until low peak and add 250g powder sugar of 3 separate intervals. Blend on high speed for 3-4 min 7. In egg white, mix 4 egg yolks in low speed. It will be a bit runny consistence. 8. Shift flour and mix ½ of all-purpose flour into egg mixture in fold motion in low setting. After it mixed, add 2nd portion of the all-purpose flour. 9. Blend in to flour mixture pour milk, honey and oil mixture slowly and mix fast setting about 30 second. 10. Pour the mixture to mold or pan 11. Drop pan on the table a few times to take out some bubbles in the batter. 12. With long stick, mix batter in continues U motion twice left to right and right to left. 13. Bake for 60 minutes and check castella cake consistence with a pick. 14. Meanwhile brush oil on the wax paper. 15. Take out castella and cool on the rack. 16. Wrap castella with wax paper. 17. Aging at room temperature for 2 days 18. Cut outer thin layer of 4 sides and cut ½ inch thickness.

@@ithink_widz i believe the batter won’t bake evenly, leaving some spots overcooked. But I’m not an expert at cooking!
I tried this and it was good. The taste was mild, so I plan to use melted butter instead of oil and add some vanilla.

180도로 10분 굽고 온도를 145~150도로 낮춰서 추가로 40~45분 구워주세요.오븐별로 차이가 날수 있으므로 구움색 보시고 꼬치테스트하셔서 반죽이 묻어 나지 않으면 완료해주시구요.가능하면 레시피 재료 변경없이 구우시는 걸 추천드려요 ~
