I tried using freeze dried strawberries once like you suggested in previous videos but I dumped the whole pack in my blender and blended before realizing there was a moisture absorbing packet in there 🥲 i got upset and gave up lol. Might give it another shot with this cake, I love strawberry cake and whipped cream! I used to eat a cake called “fraisier” from a french bakery when I was a kid and it was basically very similar to this

Hey Gretchen! This look amazing, I love that you used whipped cream to frost and fill it instead of buttercream! I've been using RichWhip, from the kosher frozen section at Kroger, after some bad experiences with the Silk stuff not whipping up when it first came out, but maybe I need to try it again!
Hey thanks! Yeah me too... I just can't do all that buttercream ALL THE TIME! And that SILK is a life saver! I will say that if you OVER WHIP it will get grainy and separate, so just to very soft peaks on medium to high speed and it will thicken as it sits and especially in the refrigerator!

I know I was always torn between the strawberry shortcake pop and the chocolate eclair (*as I chased the ice cream man down the street making my mental decision as I got to the truck! LOL) I am not sure what Good Humor uses for the crunch, but I am sure it is not golden sandwich cookies! LOL

Gretchen do you think you can make a vegan version of your carrot cake? The one where you melted the butter to get the nutty flavor... I know you have one but it uses oil.. Just asking if it would be possible. Thanks!
Hi!! You can totally use melted vegan butter in place of the oil in that recipe. Vegan butter won’t really “brown” though because there are no milk solids, vegan butter is essential oil at the end of the day 🤷🏻♀️
No not here, this is a cold preparation mousse recipe and cornstarch and tapioca need to be boiled to activate, so while perhaps there is a recipe out there with those ingredients, I cannot just tell you to sub that in here, it won't work, not without some major adjustments to the recipe, so I would rather you find a recipe that is more suitable to the ingredients you have and then just plug that into my idea for this finished cake :)
Should i follow your vegan Chantilly cake recipe for a cake with strawberries? My granddaughter wants a strawberry cake like a strawberry shortcake that you get in a bakery not a shortcake biscuit recipe. She definitely does not want this. I watched your Chantilly video & that definitely looks like what she wants but with strawberries on top

Freezing strawberries and then thawing them seems to make them sweeter and redder.
