This No-Bake Vegan Strawberry Cheesecake is super easy to make! This “cheesecake” is not only vegan but also raw, dairy-free, gluten-free, and free of sugar.
This no-bake Vegan Strawberry Cheesecake only requires simple (main) ingredients: dates, cashews, walnuts, coconut cream, vanilla, lemon, maple syrup, and strawberries. The taste is light and fresh.

Ingredients (6-inch springform pan)
*1cup=240ml, 1Tbsp=15ml
*No Substitution Suggestions Unless Specified.
CRUST
• ¾ cup raw walnuts (sub almonds, pecans, etc)
• 1/3 cup desiccated coconut
• 2 Tbsp sunflower seeds (optional)
• 2 Tbsp melted coconut oil
• 30g pitted dates
• Pinch sea salt
You can use your preferred nuts/seeds.
CHEESECAKE
• 1 cup raw cashews, soaked overnight
• ¼ cup melted coconut oil
• ¼ cup maple syrup
• 1/3 cup coconut cream
• 1 Tbsp lemon juice
• ¼ tsp vanilla bean paste
• Pinch sea salt
STRAWBERRY COMPOTE
• 1 cup strawberries, hulled
• 2 Tbsp melted coconut oil
• 1 Tbsp maple syrup
• 1 Tbsp lemon juice (optional)

Hi won't the strawberries come out icy when you eat them
How long do you leave it in the freezer for? Can I leave it there overnight or is it best to move it into the fridge after a few hours of it setting in the freezer?
Yes, you can definitely leave the cake in the freezer overnight! It’s actually preferable :) Allow to defrost for 10-20 minutes before serving. I like to freeze in sections and defrost as needed.

Dates work as a binder so you can replace it with whatever it binds the crust ingredients:) Like other dried fruits or melted coconut oil etc. I have only tested with dates though.

Oh Dear Lord…I forgot to tell you my hubby and I had a small piece each and our two young adult children demolished the rest…they ate it still frozen 🥶 while I enjoyed mine sliver by sliver! It melted like a true cream cheese 🥯 one ☝️! It felt so good . Dinner was tasty and all devoured also…so we waited an hour before we all agreed IT WAS TIME, that special moment! We all agreed to make this more often, especially when guests come to visit!

What is the minimum time of soaking the cashews?
6-8h. 30mins -1 hour in very hot water.

my strawberries became icy, they did not look fresh like yours. Did you really put yours in the fridge or the freezer?
@@BruceT-rg8bp I never put the cake in the fridge, use only the freezer! Otherwise, the cake will be quite soft.
@@BruceT-rg8bp My first thought when seeing this recipe was that the strawberries will become frozen solid and it will be nearly impossible and unpleasant to eat a big frozen strawberry and it would also be difficult to cut a slice of the cake if the cut passes through a big frozen strawberry. Sorry, Creator, but it is harder to make an interesting looking cake (which this one certainly is) which also practical to keep, cut, serve, and eat.
