@@TrishTruitt ummm I thought he said it was a grain. I mostly don't eat anything that is high in carbohydrates and that it's not organic. However, I will rewatch it to be sure. Thx for the heads up.
I use buckwheat as a cover crop in my garden, it crowds out weeds and draws bees while enriching the soil with nitrogen. I’m going to start cooking with it though after watching your video, thanks for the ideas!
Thanks very much. MOST INFORMATIVE. For over 20 years, I've sprouted Buckwheat Groats. I finally have another grain option. Off now to shop for them and can hardly wait to see to what extent my culinary creativity is going to go. 🙂
Very informative, thank you! In the past, I eat buckwheat in all-buckwheat pasta noodles, pancakes and a lovely crispy cereal because I try to stay gluten-free. But I will endeavor to use more groats in cooking as a substitute or alternate to brown rice.
We're a family where everyone is either from Eastern Europe, or our parents are - so Buckwheat is a normal part of our diet. They're tasty and easy to use. Some friends started using it when we told them to try using Buckwheat in dishes they normally use Barley for and now they are hooked. Luckily we've a tonne of Eastern European grocery stores around us, so getting it is easy and cheap. Kasha Varnishkes is our go-to - but lately we've been making what my mum called "Shtetl Pilaf" - an easy, veggie (and sometimes meat) Pilaf using Buckwheat. Again - TRY IT. It's NOT like any other seed/grain, and it's addictive!
i haven't sprouted buckwheat yet but i have been meaning to So thanks for the reminder i plan to start a jar of them this weekend and i want to look into more about how to use the sprouts thank you
I have been making buckwheat bread lately. I soak whole buckwheat groats, blend with water to a porridge consistenct and let sit for 12-24 hours. Then add a pinch of salt, some seeds and herbs and bake - wonderful!
It would be good to explain about raw and roasted buckwheat. I find commercially roasted buckwheat over-roasted (two times the amount of water can turn it to mush) and prefer to roast the raw grain more lightly in a dry iron skillet. Home-roasted buckwheat that's been cooled and mixed with a beaten egg can be simmered in chicken broth with a little olive oil and dill for a rich grain dish. A staple in macrobiotic cooking, it's also delicious combined with sauteed onions and other vegetables.
I love Buckwheat porridge for breakfast with hot milk. I was lucky I married my lovely Russian Husband otherwise I would have never learned the value of this amazing tasty food.
I don't know why I never tried all these grains before but I am eating them now. Just got some buckwheat and can think of many things to do with them already. I made veggie burgers with wheat grains and they turned out great and provided a great chewy texture. Going to try that with the buckwheat. Salad bowls, soups, sides. Can't wait to experiment. The whole low carb and keto craze kept me away from these great foods. Not anymore!
I now make Buckwheat tortillas and Buckwheat crackers all the time. Today I'm experimenting with different flavors for my dehydrator crackers... (honey bbq; cashew; and cinnamon with monkfruit sweetener 😋).
Thank you, I didn't know that about buckwheat. We have many indigenous buckwheats here in California, but I see now that they are a different genus. And BTW, you say related to rhubarb and sorrel. So then, is buckwheat, its groats, loaded with oxalates? Or high only in the leaves like the rhubarb. It so, you should also provide a warning, especially for kidney patients.
Please make sure you don't have an allergy to buckwheat a co worker I knew died because no one at work knew she was allergic to buckwheat. She left behind to young boys.
Isn't it true that buckwheat vs wheat is a slightly alkaline ph grain - making it more healthy vs highly processed and (white man bleached) grains being acidic ph ?

@@birage9885 High oxalate foods can and do precipitate gallbladder and kidney calculi. Anyone who as has passed a kidney stone will take caution. Blanching/boiling veggies and greens reduces oxalates by 50-80%. Always drain the water. Grains, pulses rehydrated first then boiled lowers oxalates, but if the water is soaked in by the grain, it seems to me, the oxalates are not removed but diluted. My suggestion is to boil for a few minutes, drain, then add hot water and finish boiling.
Fagopyrins can be reduced with soaking, aflatoxin can be found in grains and nuts stored inproperly. Others are very low amount in buckwheat. So stop believing everything you hear, confirm it through crossreading. Start from wiki.

No grains for me.

My Polish grandmother substituted kasha for rice when making cabbage rolls, (no meat), with a generous topping of onion butter on top. Delicious!
I'm jealous!
May I ask, if there was no rice or meat, what was in your cabbage roll? It sounds like an interesting option.....
My friends wife is Russian, and they told me to try buckwheat. It was a love on first site. I eat it with almost every meal now.
Good friends right there!

Does it sourdough?
@@cherylm2C6671 Don't know if it is officially sourdough but the process is like that so it seems like a sourdough-type of bread to me.
@@thespiritualistoslo how much water do you add to how much soaked buckwheat ? At what temperature do you bake it for how many minutes ?

You forgot that buckwheat can be made with hamburger seasoning or taco meat and can be a great ground beef substitute for Mexican dishes.

Any opinions on the oxalate content of buckwheat, which is something buckwheat often gets condemned for, having high levels?

How do buckwheat compare to bulgar
Bulgur is a actually a wheat and it’s not gluten free. Whereas Buckwheat is pseudo-wheat and it is gluten free.

actually a pulse not a grain
When we think pulse we think bean.
Buckwheat is a seed not a grain
Who else is here to learn how to make your own Protein powder lol
It may be gluten free, but the body turns it into glucose [blood sugar] when it hits the digestive system and raises insulin levels.
"It's good to soak grains for digestibility," but buckwheat isn't a grain, is it?
Quinoa is not gluten free it has its own gluten
How can Quinoa contain gluten if it's not a true grain? Only wheat, rye, oats and ... contain gluten
