Ingredients:
For moutabal:
1 medium eggplant rousted
1 clove of garlic minced
1/4 cup tahini
half lemon juice
1 tbsp yogurt
salt
olive oil on top
For baba ganoush:
1 eggplant rousted
1 clove of minced garlic
1 tbsp parsley minced
1 tbsp chopped green bell pepper
half small tomato cut it in to small pieces
1/4 small onion finely chopped
half lemon juice
olive oil on top

Holy crap, that looks good! :) I've started making my own hummus and I can't believe I've been paying for store-bought hummus all these years. Even the most amateurish homemade hummus makes the best store-bought hummus taste like wallpaper paste. Trust me.
This is not hummus. Hummus made with chickpeas.

I'm new to the Middle east, haven't ever even tasted moutabal, but made it just by following your recipe, and my husband who's been here a long time, loved it. Of course, I loved it too, so creamy and delicious.

Ahmad, I am here a small Prefeture town in Aquitaine France. Despite their being considerable arabs in the area sadly they do not establish many moroccan/Algerian restaurants here. I have been seeking a good Aubergine salad recepie. As you know there are many on YT, but I was particularly impressed with your "no nonsence" approach without complication. Tonight is my second try following both your recepies. The last time I ate this dish was in Haifa Israel and it was very good too. Thank you once again & I hope to try your Hummus dish too. To save time and electricity, I cut the eggplant in half and used the frying pan to roast and add the baked aroma, then I put them in the microwave oven to soften. It worked very well.

My Hubby makes the best smokiest Baba Ganoush! He uses our Kamado Joe grille, and uses twigs from our pear trees to smoke the eggplant. Tons of garlic of course! I make the tabbouleh, and I am learning to make the pitah or flatbread from a turkish recipe. Can't wait to try the Moutabal.

Just made Moutabal - it was delish 😋 and really easy to prepare. Cooking the aubergine on the stove reminded me of how my Mum used to cook these because I am Indian and we have a dish that also starts this way. Thank you from Italy 🤩

I’m just now Starting to build my middle eastern recipes on my channel from recipes that my Syrian aunt taught me growing up!! Nice to see similarities ! Love the channel!
